Help Me Choose!

I'm in the midst of planning our Feb trip and my ADR opens up Wednesday morning :goodvibes That being said, I would love some input on your favorite "must-do" restaurants.

I have the following set to be booked: Beaches & Cream, Le Cellier, and Be Our Guest. We were hoping to try Biergarten, but as it stands they have just opened up a few weeks in January.

I would love to have something reserved in place of it in case we can't get a reservation when our week opens up. We are not picky eaters (well, BF is but that's alright 😅) and we are good with casual dinners but are also interested in fine dining or similar. Our main focus is just having a good experience and trying restaurants we couldn't experience at home in North Florida. Any suggestions would be welcome!
 
Here are all of our favorites:

AKL - Boma at breakfast and dinner.
WL - Whispering Canyon Cafe for breakfast.
YC - Ale and Compass for breakfast.
MK - Liberty Tree Tavern, Tony’s, and Be Our Guest.
Epcot - Space220, Chefs de France, Coral Reef, Tutto Italia, and Le Cellier.
DHS- Hollywood Brown Derby and 50’s Prime Time Cafe.
AK - Rainforest Cafe.
Disney Springs - The Boathouse.
 
Boma or Jiko might be other ideas. I can’t get African inspired dishes in the suburb I live in. I think both are great. Skipper’s is a tad different, you might not have a place like that at home. Casual but unique, I’d say SyFy if you cam actually book it. Might need a bit more info about likes and plans to give more ideas.

I keep hearing really good things about Boma! Definitely haven't tried that cuisine back home. I was playing around with the idea of Kona because it would give us a reason to visit Poly. I've only ever had their breakfast but may consider their dinner.

Did you try Space220 or is it on your list to? I'm actually very tempted to try and reserve it for the experience alone
