One thing I have noticed over the years when someone asked "Should I stay at Resort A or Resort B?" Most people will chime in and recommend the more expensive resort. It really never fails. The Grand Floridian is the flagship resort and the most expensive of all. Seriously ... freaking ... expensive. I have stayed there (over on the
DVC side) and it was nice but yes, I did think it was a little "stuffy". I get a slightly pompous Victorian England feel to it. Do you really want to stay in a hotel that has an English feel to it, or do you want to experience something different?
The WL is probably the most "American" of the resorts. It was actually a good choice for you IMO. But, I can understand not wanting to be in the middle of construction.
The Polynesian is very tropical, but is also under construction.
The Yacht and Beach clubs have an upscale preppy feel to them. The Beach Club is a little more relaxed. The location is better, IMO, than the monorail resorts. You can walk/boat to Epcot and Disney's Hollywood Studios.
Boardwalk is more relaxed yet, with a fun American Atlantic seaboard feel. We love the Boardwalk. It has the same location as the Y&BC.
Animal Kingdom Lodge is the most unique of all the WDW resorts. Does your grand daughter like animals? You can book a room that faces the savannah and see giraffes and other animals right outside your balcony. It's really quite amazing and relaxing. You can get a room with bunk beds so each one of you has a bed and your grand daughter can sleep on the top bunk. It does take a little longer to get to the parks from AKL, but sometimes I think that's part of the charm.
Let's not forget the "moderate" resorts! You can save enough over 10 days to come back sooner rather than later. The rooms are smaller and they don't have inside corridors but they are still quite charming. They also have large food courts where you can grab a quick counter service meal.
Port Orleans French Quarter feels like New Orleans. It's small and compact and beautiful.
Port Orleans Riverside is upstream from POFQ and is themed so that the buildings become more rustic as you go upriver. It has a great main pool and food court! It is a very large resort, but it has special "princess" rooms is you think your grand daughter is still into that kind of things. Both POR and POFQ have boat service to Downtown Disney.
Caribbean Beach Club is like being on a Caribbean island. It's laid back and colorful and fun. It is also a large resort.
Coronado Springs is like the American Southwest. It is probably the closest moderate to a deluxe in terms of amenities. It is a large convention hotel, but that never bothered me. The pool is very nice and I really like the Pepper Market restaurant.
If you were really on a budget, I would recommend Pop Century but I think you'll be happier in a moderate or above.
