Help! I need vegetarian recipes!

I want to make vegetarian cook books for the two girls I took in as Christmas presents. They'll be graduating from high school in June and moving into their own place. They love any spicy (especially mexican), rice, beans, all vegetables, fruits, cheese, etc. One will eat chicken, occasionally and the other will eat shrimp. I would like to put together a book for each of them with recipes for appetizers, soups, salads, main courses and desserts. I have a few that I've found online and made, but need lots more. Especially a good one for homemade mac n' cheese.
 
I made an amazing vegetarian spinach recipe last night. It is Saag.

Brown 2 finely chopped onions, 3 finely chopped garlic cloves and 2 finely chopped hot peppers (I used jalapenos) in a couple of tablespoons of canola oil. Meanwhile boil water and drop a tomato in for 15 seconds - take out and peel. Finely chop that too. Add to onion mixture when onions are golden. Meanwhile shred 3 lbs of spinach. Add to pot - cover and cook for 25 minutes, stirring every once and a while. Add 1 tablespoon garam masala and cook with lid off until liquid evaporates. Serve with basmati rice.

It is really delicious - almost creamy with no cream or butter.
 

Have you tried the website epicurious.com?
It's a collection of recipes from Bon Appetit and Gourmet Magazine. You can a search narrowed by course and by Vegetarian only. There's also a little "clock" icon by recipes that are easy and quick to make. And, you can sort by rating (which I usually agree with)

You'll get way more than you can use that way, I promise!
 
Thanks so much everyone! I've been able to take a quick look at the threads mentioned and the websites. Now my problem is going to be choosing which ones to put in!

I definitely need to keep it pretty easy and inexpensive, which was my problem with the cookbooks I found at the bookstore. A lot of recipes were complicated and expensive, which isn't going to work with teenagers making their own meals. That was one of the reasons I decided to put something together for them.
