According to one of the waitresses at 'Ohana's the caramel sauce is just the store bought kind (such as Marzetti) thinned down with a little cream or milk.

Malibu Macaw
from Tambu Lounge at Poly
cracked ice
1 ounce vodka
1/2 oz clear orange liqueur
1/4 cup orange juice
1/4 cup cranberry juice
1/4 cup sour mix
1/2 oz cherry brandy
orange slice
maraschino cherry
Put cracked ice in 8 oz glass. Add vodka, clear orange liqueur, orange juice, cranberry juice, and sour mix. Stir lightly. Float cherry brandy on top. Garnish with orange slice and cherry.
'Ohana Honey Lime Dressing
makes 2 cups
1/2 C honey
1 t dry mustard
1 t salt
1/2 C cider vinegar
1/4 C lime juice
1/4 C diced white onion
1 C canola oil
Place all ingredients except oil in food processor and blend until smooth. Slowly add oil until it is well incorporated into dressing.
POLYNESIAN SWEET AND SOUR SAUCE (Walt Disney World)
1/2 cup water
1 cup white vinegar
1 cup granulated sugar
2 teaspoons red food coloring, optional
2 tablespoons cornstarch
2 tablespoons water
1/2 cup diced green pepper
1/2 cup diced onion
1/2 cup diced pineapple
In a saucepan, combine 1/2 cup water, the vinegar, sugar and food coloring if desired. Bring to a boil.Dissolve cornstarch in 2 tablespoons water and stir into vinegar mixture, using a whisk. Cook and stir 5 minutes.Add green pepper, onion and pineapple. Serve on shrimp, chicken or pork. Refrigerate leftovers.
Ohana's Turkey (white meat) Marinade
2 Tbs Garlic, minced
1/4 cup Malt Vinegar
1/4 cup Lemon Juice
3 dashes tabasco
1 tsp. Kosher Salt
1/2 tsp. Cracked Black Pepper
1/4 cup Light brown sugar
1 cup Olive Oil
In a food processor process all ingredients except oil. Slowly add the oil to the processor to form an emulsion. Reserve half of the marinade to use later. Marinate the meat for 2-3 days in the refrigerator. Strain the reserved marinade and use it to baste the meat while it cooks.
Dinner (Banana) Bread
from 'Ohana, Polynesian
Yield: Two 8oz loaves
1 ripe banana (crushed)
3 Tbsp. sugar
1 cup high gluten flour (self-rising bread flour)
4 tsp. shortening
1 egg yolk
3 Tbsp. powdered milk
1 Tbsp. salt
2 Tbsp. yeast
4 Tbsp. water
1/2 cup butter

Place banana, egg yolk, water, shortening, salt, sugar, flour, powdered milk, and yeast in a mixing bowl; mix on 1st speed for two minutes and then on 2nd speed until dough pulls away from sides of the bowl.
Dust sides of bowl with flour so dough does not stick. Let rise to top of bowl.
Cut dough into two pieces and roll tightly into loaf shape.
Place three horizontal cuts on top of loaf and let rise until doubled in size.
Bake at 325 until golden brown. Remove and brush with melted butter.
Serve warm.
