Help: Fun New Year's Eve Snack ideas?

OK, all you creative cooks out there. . .do you have any fun, yummy, and--this is the important one--HEALTHY snacks that I could serve my family for New Years Eve? I want to have the feel that I'm indulging when I'm really sticking to plan! Any help that you can give me would be appreciated, because I'm really challenged when it comes to menus, recipes, etc.:confused:

It's not anything too exciting cooking wise, but for New Years we stay home. It's DH, DD, DS and myself. We treat ourselves to shrimp cocktail (not too bad for the diet, just watch out for cocktail sauce if on atkins), Some nice cut up veggies with dip (the kids actually eat them if they have dip!;) ) and then a nice steak dinner. I use the good china and crystal. My DH & I have wine and the kids have gingerale in their wine glasses. Like I said, nothing extravagent cooking wise, but very festive and we all feel "special" eating like that!
 
You mention you want to stay on plan, which plan are you following? This will make giving you suggestions a little easier. :)
 
Yeah, the plan WOULD help, wouldn't it?:D Weight Watchers!:D
 

Here's a yummy Spinach Dip recipe from my WW leader. Only 1 point for 1/4 cup! It would be good with veggies or with crackers...


Spinach Dip
Serves 12: Serving = ¼ cup = 1 Point
1-12oz. Fat-Free Sour Cream (5 Pts.)
1-10oz. Pkg. Frozen Chopped Spinach (thawed and drained)
1-Cup Fat-Free Kraft Mayonnaise (3 Points)
1-1.4oz. Pkg. Knorr Vegetable Soup Dry Mix (2 Points)
2 tsp. Lemon Juice
1-8oz. Can Water Chestnuts (chopped and drained)

Mix all ingredients together. Stir well. Chill at least 3 hours.
 
I know on the back of the frozen Phylo dough there is a recipe for a salmon/cream cheese crepe type thing that is good. They are only 1 point each.

I also found a recipe for a 1 point artichoke dip that looked good.
Got it off the WW site. It sounds like the ones that they serve at Fridays & Applebees. Melba toast is low in points (5 round are 1 point), as is Kashi TLC crackers. I like the plain ones, very tasty, all natural and has some fiber in them (15=2 points).

Spinach Artichoke Dip

POINTS® value | 1
Servings | 22

Ingredients
5 oz chopped frozen spinach
8 oz fat-free cream cheese
8 oz 1/3 less-fat cream cheese
14 oz canned artichoke hearts, without oil
3 bulb garlic clove(s)
1/4 cup grated Parmesan cheese
1/2 cup fat-free sour cream
2 cup part-skim mozzarella cheese

Instructions
Combine 1 1/2 cups mozzarella, sour cream, 2 tablespoons Parmesan, and next 6 ingredients (2 tablespoons Parmesan through spinach) in a large bowl, and stir until well-blended. Spoon mixture into a 1 1/2-quart baking dish. Sprinkle with 1/2 cup mozzarella and 2 tablespoons Parmesan. Bake at 350° for 30 minutes or until bubbly and golden brown

Makes 22 1/4 cup servings

Shrimp cocktail was a perfect idea, you could also include shell fish like scallops, clams, mussels, crab & lobster that are all low point. Just don't use butter.
 
I'm not sure how many points this would be on WW - but for Atkins it's great!

Take little "blobs" of spicy pork sausage and put them inside mushroom caps. Then, top with grated parmesan and bake at 400 for about 8-10 minutes! Really yummy!!!!::yes::

This could be good for Weight Watchers, if you omitted the sausage. How about a little blob of diced tomato instead?

(:crazy: But it doesn't sound nearly as good!)

You could always use turkey sausage instead and it would be more WW friendly. I like this taco dip.
1 8 ounce FF cream cheese (softened)
1 jar salsa.

Put in blender and mix well. Serve with Baked tortilla chips.

Yummy

ALso this is good

2 8 ounce packs ff or low fat cram cheese
1 can minced clams with juice

mix together and heat. May add a litttle garlic or onion to taste. Serve with crackers or cubes of bread



For a great veggie dip try
1 16 ounce ff sour cream
1 pack hidden valley ranch party dip

mix together. Great on veggies and chips and pretzels

ALso

1 package dried beef shredded
2 8 ounce packages cream cheese softened
Add 1 -2 tsp worschire sauce
garlic powder and onion powder to taste

this is great on crackers!!!!

All of these are easy and taste great. WW friendly and some may be atkins friednlky if regular sour cream and cream cheese are used instead.
