We are planning going early 2018 and dont want to drive. What hotels do you recommend that is reasonably central to either use hotel transfers or taxis ( uber etc) . OR do you this its worth booking an onsite hotel to inc transfers and dining plan? Ive read so much that i think ive confused myself :/ is the cost so different to inc plan or paying as you go helppp

Pick up a copy of the easy guide to your first wdw visit. it will help you greatly with choices and things to consider at least for the disney side of your trip. are you only coming to disney? do you have other plans to visit other sights or theme parks. It's takes a different direction than the other planning books.

The short answer if you have to do the math. Meal plans for many dont' save money but for some it's a steal. the free bus to and from a disney resort from the airport is a big plus and free disney transportation around property is also a nice touch (and runs very frequently where offsite hotels is generally a couple trips in the mornign to disney and a couple trips in the evening back from disney).

It's a lot easier to help answer questions when we know what your hoping to do at a high level view and what your looking to avoid needing. that book will be an amazing start to understand what is at disney so your more informed in what you might want to do if you know nothing about disney.
 
I've always found it cheaper to stay offsite and pay for our lunch and dinner in the parks (breakfast in the condo). How many people are in your traveling party?
 
I forgot to mention, how many people are traveling with you and if you don't mind saying, their ages. offsite gets much cheaper when you need larger accommodations.

2ad 2ch who will be 14. We want to do as much/ many parks as possible as we have never been and not sure if they ( kids) will want to go again. I think universal is the one park we really want to see maybe more than once .
 
My advice on this is if you do US/IoA, it is crazy not to stay on site at one of the hotels that allows entrance 1 hour early and the free fast pass. It is simply worth every penny. I call it the "Front of Line Pass". I would never do US without staying at one of the 3 hotels that offer. Even if it is 1 night, that gives you 2 days of this pass.

Staying off site for WDW is a different story and a bit easier. Cabs, Uber, and other alternatives start to add up quickly. If you don't have a car, those extra fees would be about the same as a Value resort.
