Help finalize 40th bday trip

Two girlfriends and I are heading to Universal for my 40th bday!
We land at MCO very late Sat 3/27 and staying at the MCO Hyatt so we can get in a rest quicker and not deal w/transportation at midnight.
Sun 3/28 we'll check into PBR club level. We'll have all day Sun, Mon, & Tue at the parks (no water park).
We were planning on Toothsome for my bday dinner on Sun, but they have no dinner times open then (or for Mon & Tue evenings).
Would you suggest an 11a lunch? We likely won't make early entry that day & parks will be crowded. So we could spend that morning seeing the resort and I need to exchange my ticket for an AP.
OR go to park and do a 330p late lunch/early dinner?
OR pick a different restaurant-where would you want your bday dinner?
I was thinking something more chill than (theme park) fancy, but I'll consider all suggestions. Preferably on property.
I was also thinking Cowfish and Antojitos for our other dinners while we're there.
 
I think PBR has some good Italian restaurants that would be lovely for birthday dinners (assuming you like Italian), so maybe that is an option? I think Toothsome is okay, but not that special - if you are really into it maybe try a lunch one day, or even better, skip eating there and just get a shake/dessert at the much shorter ice cream line on your way back to the hotel. I really like Bice at PBR for a special occasion, although Mama Della's is also good if you are into strolling musicians.
 
Also, I think that is a great call staying at the Hyatt MCO given your late arrival!! Also, while Toothsome may not have reservations available, they still do walk-ups, so if you show up for an early dinner you might be able to get in (maybe 4:30/5?) if you have your heart set on it. Again, I find their food decent but nothing special - really they are known for their sweets which you can get without eating there.
