I need some heart healthy dinner suggestions. A friend of mine (and her husband! :eek: ) recently had a heart procedure done and everyone is taking turns making dinner for them and their kids. Does anyone have any suggestions for easy to prepare BUT tasty and heart healthy dinners? There sick of broiled fish and chicken.

Most people I know who've had heart procedures are advised to avoid red meat, I'm not sure about pork -- I think it's okay if it's lean, maybe like a pork loin.

I was going to suggest a fish dish with a twist: I get a salmon filet from Costco and season it with a little bit of salt and dill. Then I get a couple of cans of crab meat and mix it with mayo (you could use light mayo -- I would avoid the fat free one though, tastes horrible!) like you would a tuna salad, and mix in some diced onions, and spread it on top of the salmon. If you have capers and Italian bread crumbs, that makes a nice topping that will give it a nice brown color too. Bake for about 30 min. at 350.
 
Both of my parents have heart disease and their doc said avoid fatty red meats. But they can have lean cuts.....filet mignon being one of the leanest out there. Works for me....it's my favorite cut.

Don't know if you're cooking it there or taking it to drop off. Don't know how well it would travel.

Maybe you could take all the side dishes all prepared and then take the raw steak for them to grill. That way it'll taste the best...fresh grilled. :) Mmmmm

If you can use a grill that usually adds a better flavor to almost anything. I eats lots of chicken during the week and find that grilling it with seasonings of different flavors works great. I also grill vegtables to go along with it, such as zucchini, sqaush, corn. You can also try lean pork loin, it is low in fat, but it must be from the pork loin center.
 
How about some nice homemade Vegetable Soup, a great gig spinach salad with a lilttle crumbled bacon and manadrain oranges and some italian bread. I have a great recipe for Veggie soup from Prime Time Cafe- It's easy and oh......... so good!

What about spaghetti or a grilled trukey breast? You can adapt almost any good recipe you have by using reduced fat or nonfat foods. I have a great recipe for chicken divan- that usually uses cream of mushroom soup, and sour cream, bit I have used the reduecd fat version of those ingrediants and it tastes fantastic!Shish Kabob? How about Turkey Sub sandwhiches?
