Help Deciding on Which Park What Days? End of March

Hi! We will be there the last week of March and will be in the parks from the 28th-31st. We are staying at a deluxe so we plan to take advantage of extra evening hours (we have parkhoppers), and we are rope drop people so we will be there early.

I know the spring race weekend is that following weekend and starts Thursday night at Animal Kingdom.

Our tentative plan is:
Monday: Rope drop MK and parkhop to Epcot for EEH
Tuesday: Hollywood Studios
Wednesday: Rope drop Epcot and parkhop to MK for EEH
Thursday: Animal Kingdom for rope drop and lunch at Sanaa then spend the afternoon/evening doing anything we want to see again.

But, we're not sure if it will be a let down ending our trip at AK since we won't be riding FOP and Everest will be closed. But we think it will be the least busy park that day since the race is happening everyone will avoid it, but maybe we're wrong. We have gone back and forth with switching our AK and HS days. We also know Mondays are busiest at MK, but we really want to start our trip there, and feel alright knowing we have evening hours Wednesday as we've heard everyone saying how much they were able to get done.

I'd appreciate any feedback or suggestions! We also will be utilizing Genie+ and the DAS as needed.
