Actually, she'll probably love EPCOT, I never met a mom who didn't like shopping, and the Spaceship Earth, Universe of Energy, and Soarin are not thrill rides. Have fun and help her explore, there are wonderful gardens, and great restaurants. Maybe since its such a big group, you could split up if she isn't enjoying the "thrill" part of the trip. Sometimes people fear the Commando Syndrome, seeing everying thing in one day, in order and without breaks. Your mom can take it easy if she likes. I let my kids (they are 18 and 13 so don't flame me), spend an hour in Innoventions while I sipped a cappucino at the Fountainview Cafe at EPCOT.
Also get her on the TTA (the Tomorrowland Tranportation Authority or something like that) used to be called the WEDway (WED is Walter Elias Disney) People mover. Its a nice relaxing ride around tomorrowland, and through space mountain, great for a break in the middle of the day.
Another thing, there are so many shows at The World that you could go and never ride a thrill ride and still have a great time. The Lights Motors Action show at MGM was great, also check out the 3d movies Mickeys Philharmagic, It's Tough to be Bug, and Honey I Shrunk the Audience (and its air conditioned). Fantasmic is not to be missed. Wishes at Magic Kingdom is awesome, and Illuminations at EPCOT is also amazing (I like to watch it while sipping a marguerita from the Mexico pavillion).
There is so much to do, boat rides from MGM to EPCOT and across the world showcase lagoon, trains in Magic Kingdom, and Animal Kingdom, street performers, gardens...its so much more than rides. There are the Boardwalk shops, Downtown Disney....I could go on and on, the people at work are tired of listening to me, and so probably are you. Have a wonderful time.
