Help- Chicken Question...

Hi everyone! I'm getting a fresh, cut up chicken this evening. How do you cook bone-in chicken 'pieces'?? I've roasted a whole chicken before... and cooked chicken breasts in the pan.

Oh, and we're getting a whole chicken for only 2 of us. What do you do with leftovers? I think I want to try to make stock for soup (WHICH I HAVE NEVER DONE BEFORE EITHER SO ANY ADVICE HERE TOO WOULD BE MUCH APPRECIATED!!)...

You could BBQ the pieces. Then with your leftovers you could make salads, quesadillas, sandwiches whatever.

Another thing I do with chicken pieces is dip them in lemon juice, then into a bread crumb mixture*seasoned and parmesean cheese. then into a baking dish- slice onions and mix into the baking dish. Drizzle with olive oil. Into the oven at 375 for at least an hour(for bone in pieces)

oh and on the stock- if you go to allrecipes.com you will find tons of recipes for it. Most use the whole chicken pieces in the stock- so you are left with "boiled" chicken - can use in a pot pie.

Personally I would grill the 2 breasts and then use the rest for stock.
 
I love making chicken on the grill. I marinade chicken pieces in a bottle of italian salad dressing (the vinegar and oil kind, not creamy), a few shakes of worcheschire sauce and seasoned salt. I put it all in a ziploc bag or two, and turn it periodically so all of the chicken gets immersed in it. Line the grill with heavy duty foil, and cook over low to medium heat. Have water ready for any big flareups.

I cook all of the chicken pieces that way, and the leftovers for lunches or another dinner are great!
 
Fry them, put them in the oven, grill, or boil them and make dumplings. Or you can freeze half of them and cook some of them.

Easiest way is to toss them on a pan and cook them in the oven just like you are roasting a chicken.

We don't use marinades or bread our meat. We eat it all plain.
 

I've thrown chicken (with the bone) in the crockpot. Pour BBQ sauce over it, or Zesty Italian bottled dressing, or seasoned diced tomatoes. Depending on the size of the chicken, cook it on low all day. Lots of possibilities.

Oh and sometimes I cook the chicken plain (with just a few seasonings) in the crockpot and work with it later. Adding stuff and such. Sometimes I don't add anything other than the seasoning. Nice moist baked chicken.
 
I use a Giada DeLaurentiis recipe for Chicken in Balsamic Vinagrette (google it, its on the Food network website), is basically balsamic, olive oil, lemon juice and garlic with some seasoning. You marinate the chicken peices in the vinagrette overnight, then just place the chicken and marinade in a pan and bake at 400 for 1 hr. The chicken gets this great color and flavor. Yummm. It would work on the grill too. This is a great after work recipe for us becuase we come home, shove the chicken and some whole potatoes in the oven and go play with the kids for an hour, then viola, dinner is done.
