You must be very excited!
Have you checked out allearsnet.com to look at the menus?
On Christmas Day, I would think about whether you want a "traditional" Christmas meal, and also what park you are planning to go to. The parks are very crowded that day, so you should plan to arrive early and stay as long as you want. Sometimes they "close" to more new guest. So, I guess what I am saying is don't plan a 6:00 ADR and go to the park later in the day. You might not get in, even if you have an ADR.
You have a lot of buffet/character meals, so it might be nice to try something different.
Where are you staying? A nice Christmas dinner at your hotel would be nice if they have a restaurant that you want to try.
We enjoy Tutto in Italy in Epcot, also LeCellier in Canada.
At the Grand Floridian, we like Citricos.
Artist Point at the Wilderness Lodge is really good, and the lodge is incredible at Christmas time.
The Flying Fish on the Boardwalk is also a good choice.
Many people like to eat at the Liberty Tree Inn on Thanksgiving & Christmas because they offer turkey and all the fixings. I think dinner is a character meal, but lunch isn't.

Thank you! We are staying at the POP - As far as Christmas day, I am not sure yet which park - I jumped on the reservation tonight - which would be the best one to be at that day? Dec 22nd is my youngest daughters birthday so i was thinking definately MK that day and the 26th we will probably head for home around lunch time so we might not do a park that day.

So you upgraded to the regular dining plan of 1 table service and 1 counter service per day, right? I would add a princess meal at Akershus in Epcot, probably breakfast if you aren't adventurous eaters! Also, check out the confirmed snack credit list for some small meal ideas and ways to maximize your credits on more than just drinks and popcorn!
