Height/Age req. for riding Everest alone

We will have a 5 and 7 year old that will meet the height req. for riding Everest. From what I remember, Everest is a "two seat" coaster? I was wondering, would they allow the 7 year old to ride in one of the seats alone if my husband is riding behind her with our 5 year old? Or, would my husband have to go on twice, once with the 5 yr old and once with the 7 year old?

Yep, the 7 yr old is fine to sit solo in a seat.

I don't think you will have an issue with the 7 y/o riding alone. They likely won't be alone anyway, Everest has a single rider line so they will put someone with them. Generally, they don't have an issue about age, as long as there is an adult present when they are in line and on the ride. Our kids (who are twins) often rode together in front of us.

7 and up can ride all by themselves. No adult needed at that point on any ride at Disney (well, except maybe Speedway which has different rules)

I've seen them ask the age and then move kids around if they aren't older than 7.

Do you know if they turned them away or just had them sit somewhere in particular?

Just moved them around until they were sitting with a parent/guardian.

The 7 year old can go all the way through the line totally on his own. Therefore sitting without dad is fine.
