I would like some ideas for a healthy recipe for some left over rotisserie chicken.

So far I am planning to make a wrap using Flat Out with Weight Watchers shredded cheese. I am thinking of adding some cilantro to it. Any other ideas to make it flavorful without making it high calorie?
 
Whole wheat angel hair.

canned diced tomatos.
olive oil (very very little)
olives
black beans
onion and garlic (even powdered)
chicken

mix everything and heat.
spoon over the pasta.
Thinly cut up spinach leaves and sprinkle on top with fat free cheese.
 
When I want chicken soup I sometimes use a rotisserie chicken.

Chop up onions and celery (I like to get the leafy part of the celery too)
Put the whole chicken into the crockpot or a soup pan
Cover with water
Cook for 2-3 hours or more
Carefully remove chicken and take meat off the bones
Put the meat back into the stock.
Add chicken base to taste (This is salty so I don't add salt)
Poultry seasoning to taste
Tarragon to taste
Add dried parsley

If you have time refrigerate overnight and take off excess fat

Bring back to a boil and add a couple of handfulls of egg noodles. I make this everytime someone gets sick. If you want a "Greek" version add a bit of lemon to your individual bowl.
 
I have a great white chicken chili recipe, but it would depend on how much chicken you have left. I put the recipe in weightwatchers and it is 4 points per serving! And so good and satisfying!

Let me know if you want it!
 

I'm open to any recipes. I was thinking specifically along the lines of the wrap I am trying to make for lunch tomorrow, but these are definitely getting filed away for later!
 
Ingredients:
(3) 10oz cans of Swansons Premium Chunk Chicken Breast in Water
(2) 4oz cans of diced green chili peppers
(2) 15oz cans of Great Northern Beans, undrained
3 cups of low sodium chicken broth
3 TBS onion flakes
1 TBS lemon pepper
2 tsp ground cumin
1 TBS minced garlic
(2) 9oz bags of frozen shoepeg corn (white corn)
3 TBS unsweetened lime juice

Instructions:
Bring chicken broth, chicken and lemon pepper to a boil; reduce to simmer.

Add remaining ingredients, heat and allow to simmer for at least 30 minutes.

Serving = 1.5 cups

Top with cheese, avocado, tortilla chips, cilantro, etc.
 
Put some salsa on the sandwich - I prefer the refridgerated kind myself. Hummus is another good sandwich topping.
 
You could add a little bit of pesto to your wrap. I know that is not exactly low fat but you really only need to use a very small amount to add a lot of flavor.
