Some of our faves are:
The Crispy Chicken salad at The Golden Horseshoe which is very good although they don't give you much chicken any more.
There's also the Chicken Sausage on a Pretzel Roll at The Village Haus restaurant in Fantasy Land.
There are also tasty chicken sandwiches to be had all over the park including the Village Haus and Taste Pilots grill.
Honestly, I don't think there's much to really qualify as healthy in the parks. At least not by my definition. Some of the stuff listed in this thread is definitely NOT healthy. Just because it's a salad...doesn't make it healthy. Haha!
I recommend going to allears.net and checking out the menus to get an idea of what places may have options you'd like.

yeah, I doubt whatever was done to make chicken crispy in a salad is close to healthy. Just eat as much as you want and order a diet soda. Negates everything bad in the unhealthy food doesn't it?

Maybe not how some would define "health" food but there are "healthier" options.
What about the Turkey sandwich on multi-grain roll at Hungry Bear? Meat and Veggie skewers at Bengal BBQ? Salads at French Market? Sandwiches or Salads at Jolly Holiday?
There are some options there that are going to be better than Fried Chicken, churros and Mickey bars. Mmmmm
White Water Snacks in the Grand Californian Hotel serves Grilled Chicken Caesar Salad and a Charbroiled Chicken Sandwich. I have tried both of these and really liked them. The salad is a typical premade salad, but really nice and cold, which I like. And the sandwich is really yummy, it comes with guacamole, a grilled pepper (but not a hot one), and a side of fries or fruit I think.
Jolly Holiday definitely has some healthier options. The two starbucks in the parks locations have some of the grab and go starbucks stuff, like yogurt parfaits, salads, sandwiches, fruit and cheese platters, etc. You also can make things that are not so healthy a bit more healthy. Get a burger without the bun, or ask to have it lettuce wrapped, to avoid the refined carbs, for example.
Taste Pilots Grill has a veggie burger that is really good. Fried green tomato sandwich at the Hungry Bear is very tasty & comes with sweet potato fries. Yes, it's all fried, but if you are not a meat eater, it's nice to have options other than eating salads the whole time.
If one is looking for food that is entirely organic farm-to-table no preservatives, no pesticides, then Disneyland might not have what you're looking for...except for at Napa Rose.
However, Carnation Cafe, I think, has oatmeal on its breakfast menu. Each park has fruit stands here and there where you can purchase fresh whole fruit.

The items I listed are lower in fat than the usual fare and we're developed by Disney as healthy alternatives.
If you wan't to take it to the extreme there's almost nothing in our everyday diets that is healthy in every way and that includes many vegetables.
You have to keep your expectations reasonable and relative when your at a place like DLR.
They used to have a terrific salmon salad at that little counter service place next to the Tom Sawyer rafts (across from HM). It had a very nice piece of salmon and the salad was quite good as well.

I haven't been in a while but the Pizza Port place in Tomorrowland used to have a few salad options, most of which were delicious. Maybe not super healthy, but better than any of the greasier choices.
