Healthy (but tasty!) chicken recipes?

Beginning to get a little frustrated with trying to eat "healthy*. Have cooked chicken several times recently and ended up throwing it out because it was soooooooooo bland! Any healthy recipes for chicken that are tasty? :listen:
 
I usually season the chicken with garlic powder, salt & pepper if I'm cooking it in the oven. My DH marinates boneless chicken in italian dressing or red wine oil & vinegar dressing then grills it, it's great. We buy the lowfat dressing.

Also, from the back of a Campbell's tomato soup can, combine:

1 can tomato soup
1 tablespoon vinegar
2 tablespoons soy sauce
garlic powder

and simmer til hot. Pour over white rice, steamed veggies and chicken. It's tangy and lowfat too. It's delicious!

Onion Mushroom Chicken

Get some chicken legs and season to taste. Place in a baking pan (I use a glass one) and pour one bag of liptons recipe secrets onion mushroom soup over the chicken. Add water, chopped carrots and a couple red potatoes to the baking dish and bake until juices run clear. It's really good.

Another is: Sweet & tangy chicken

In a large bowl combine some vinegar, yellow mustard and brown sugar. Stir into the lumps are gone. Season chicken legs or wings and place in a chefs pan or deep skillet and pour the mixture in the skillet and let simmer on medium until done. (Lightly oil the skillet so chicken won't stick.
 
DH's favorite dinner is baked or grilled chicken that has been marinated in Italian Dressing. I only use the fat free Kraft Zesty Italian, and then we have a caesar salad with low-fat dressing. He has no idea that it's a very healthful meal! To him it's just tasty!

Also, we like to cube the chicken and add some teriyaki sauce, or lemon pepper, or Mrs. Dash, or a combination of all of those, and then just cook over medium heat in a skillet. No butter or anything as we have non-stick cookware, if you must you can use Pam (the olive oil Pam is good). Throw some broccoli, snow peas, etc. in if your family will eat it, serve over rice.
