We go to Epcot a lot...
The Land has a food court with quite a few options. We stopped in there recently and had a healthy meal of grilled salmon and green beans.
This is one of my favorite QS meals Ever! Love the salmon from SS! That restaurant also has sandwiches & salads that are fresh.
Others are correct that there are plenty of healthier choices on most menus these days.
Off the top of my head that I've tried: smoked turkey sandwich from Flametree is another of my favorites (comes with a side of fresh melon). Landscape of Flavors has make your own salad & a veggie plate that is pretty good w/naan bread. Tangierine Cafe's veggie platter is really good as well. You can find soups w/a 1/2 baguette for a nice small meal which worked well for me before from the bakery in France. I also really enjoyed their cheese plate w/ 1/2 baguette for a filling meal or one to split.
There was a really good grilled veggie sandwich at Backlot in HS which may have been taken off the menu (it never hurts to ask when you're there b/c some will still make it as long as they still have the ingredients even though it's not listed on the menu anymore).
I remember reading about a pretty good black bean burger from Restaurantosaurus I believe & I think there is also one at one of the QS's on Sunset Blvd in HS.
Keep in mind, you can order any entree/sandwich without fries & ask for it a la carte or you might have other options if they have them like steamed broccoli from CHH.
sautéed mushrooms or onions, lettuce, cheese, condiments, on top of a juicy burger all wrapped up in lettuce. Yummmmmmmmmmm
