I bought the tickets for our large group, but plan on having the individuals pay for their own baggage. How would they go about doing that? Do I have to add luggage at check in and use my own credit card?

By tickets I take it you mean airline tickets? Does each person have their own record locator or is everyone on the same reservation? They can always pay at the airport when they check their luggage. Otherwise, if the airline allows for online pre-payment, they can do that.
What airline (assuming you mean airline tickets... )have you looked on their website and/or called them to ask how best to go about it?

I regularly buy tickets for my adult kids. But I usually pay for the luggage ahead of time because it’s cheaper, at least on United. But I think you could probably designate whose luggage you are paying for ahead of time. But on United you save 10 per bag if you do it ahead of the flight. So I’d probably pay it and ask each person for the money later.

The airline flights are JetBlue and Delta. From their websites it doesn't look like the price is any higher when getting to the airport.
