It's lean and gamey. Make some Jerky out of it...you dont get much from antelope. We just ate at the Concourse Steakhouse and I swear their Filet was antelopish! It's not as good as elk. I dont like gamey tasting meat.
Actually it varies greatly-a young antelope killed early in the day when it hasnt run much makes wonderful meat-but get an older one a buck in the rut or one that was killed running and YUCK-we had some once that was so strong our dogs wouldnt eat it. im with utah mama-make jerky or sausage out of it;
I've had it in a stew. It was really good! The stew cooked long and low, so the meat was very tender. I didn't notice a particularly gamey taste either.
