I like how they have them too. People are at Disney and just aren't going to have dressier clothes in many instances. Most are coming from the parks (especially true for IN PARK signatures) so it's a bit much to expect that folks will dress in a way that isn't park friendly. I think the few off limit things they have work for most folks just fine. That's a good point. I'm sure those terms are used for a reason. A first-time visitor sees "Deluxe" & "Signature," and they expect a type of experience that they aren't going to get.
However, even on this board I see posts talking up CG like a Five Diamond with accolades of "the best sushi I ever had."For me, that isn't the case. Food is such a subjective thing. I enjoy CG, but if I knew I had to go all out for a restaurant that I don't consider to be anything close to an "experience," I just wouldn't go - and I don't wear jeans, T-shirts, shorts, flip flops etc anyway! I think the Sigs are comfortable for everyone as they are now, with the lax dress code, so that each family can dress however they'd like for the type of experience they believe they will have.
It's been said that where you think Disney restaurants rate varies greatly by what you have as a norm where you live. Here in small town East TN we don't have a whole lot of fine dining or top notch cuisine from other locations, like Chinese or Mexican. We have Americanized versions of them in the local strip mall. So what they offer at Disney is better than what we have at home. We are starting to get some true 4/5 star restaurants though, so we'll have more to compare it to eventually. So CG sushi probably would be some of the best we've had. But likely not the best someone from say NYC or San Francisco has ever had.
