Don't forget that along with the fact that everyone is handling utensils at buffets, people seem to be a lot more likely to stuff themselves silly when it's "all you can eat." I agree that especially at disney, chances of food poisoning are slim (and if it was food poisoning, i'm sure you'd hear about it on the news). Picking up some virus from someone else (and it doesn't even have to be from food service utensils, how many times do people wipe their nose with their hand and then touch the rides etc) or overindulgance (heck, even just a regular sitdown sometimes gives me way more food than I SHOULD eat in one sitting) is much more likely to be the culprit.
