I don't know about you guys, but we have A LOT of leftover ham from xmas dinner. I don't want to just throw it away and I know I can freeze it for a while. Does anyone have any good recipes that I can use some of this ham in?
 
Grind it up and mix it with some mayo for ham sandwiches - yum. My husband puts pickle relish in it but I don't like that.

Also, there's a great ditlini (sp? its a pasta) and bean soup with ham and tomato base.

It's soooo good.
 
My DDs love ham and buttered pasta. I chop up the ham, fry it in a pan (so it's a little crispy), boil some pasta, drown the pasta in butter and add the ham.

I also make split pea soup with the bone. YUMMM!!!!!!!!!!!
 
I make ham and cheese quiche. With the Pillsbury pie crusts it's super easy. Put a cup of diced ham and a cup of shredded swiss in the unbaked crust. Mix up 3 large eggs, 1 cup of heavy cream, 1/2 cup of milk, 1/2 t dry mustard and salt & pepper to taste. Poor into shell and bake at 375° for 45 minutes or until an inserted knife comes out clean.

Sometimes I'll add onion or fresh tomatoes. You can pretty much add anything you like to eat with eggs. :thumbsup2
 

I think grinding or chopping up the ham for ham salad is a great idea, too. My next choice would be this recipe, it is sooo good!

Allie's Delicious Macaroni and Cheese (from allrecipes.com)

INGREDIENTS:
1 (8 ounce) package elbow
macaroni
5 tablespoons butter
5 tablespoons all-purpose flour
1 quart warm milk (110
degrees F/45 degrees C)
salt and pepper to taste
1 pinch cayenne pepper 1/4 pound cubed ham
5 ounces cubed Cheddar
cheese
5 ounces mozzarella cheese,
cubed
5 ounces Monterey Jack
cheese, cubed
paprika to taste

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 baking dish. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
2. In medium saucepan, melt butter and stir in flour to make a roux. Cook 1 to 2 minutes, stirring constantly, then whisk in warm milk a little at a time to make a white sauce. Bring to a boil, then reduce heat and simmer. Mix in salt, pepper, and cayenne, and stir frequently until sauce thickens.
3. Remove pan from heat and stir in cheddar, mozzarella, jack and ham. Combine pasta with sauce and stir well. Pour into baking dish. Use paprika to make a decorative pattern on top. Bake 45 to 60 minutes, or until top is the desired crispiness. Let rest 20 minutes before serving
 
Oh, yum. I'll have to try that mac recipe. I love ham and homemade mac and cheese. Great winter food.
 
How long can you wait to freeze it? I made ham on Sunday night, the leftovers are in the fridge, is it too late to freeze?
 
We always save the bone (with some meat still hanging on it) and make ham-bean soup.

You'll need the bag of mixed, dried beans from the grocery store... get the one with the seasoning packet in it. Follow the instructions on the bag to soften the beans and then rinse them. Then, add beans, water, a can of undrained diced tomatoes, an onion (diced), and the ham hock in the pot and simmer for a 1.5-2 hours. Remove the ham hock from the pot, cut the ham off the bone and put the cut up ham back in the pot, add the seasoning packet to the pot and cook for 15-30 min.

It is sooooo delicious and great to eat on a cold, winter day!
 
Cut up a few potatoes, throw in a couple cans of green beans and some onion bits. Then add ham last for flavor.

If you have any ham chunks they make a great grilled shishkabob. Ham, pineapple chunks and maraschino cherries alternated.
 
Ham Loaf

We love ham loaf and sometimes my DM will make ham balls with the same recipe.

1 pound ground ham
1 pound pork or hamburger
2 eggs
2/3 cup cracker crumbs 1/4 cup milk
***Dressing***
1/4 cup vinegar
1/2 cup water
1/2 cup brown sugar
1 tablespoon mustard


Directions:

Mix loaf ingredients and form into a loaf. Boil dressing a few minutes. pour over loaf and bake in moderate oven (325-350F) about 2 hours basting occasionally. Dressing should become thick and syrupy.
 
1/2 pound ham diced.
1 pound 12 oz bag of "ore-Ida" Potatoes O'Brien with Onions and Peppers.
2 eggs
1 cup milk
8 ounces cheese.


Mix ham, Potatoes and cheese and place in Cassarol dish.
Whip the eggs and milk together. Pour over ham mixture.
Back at 350 for about 45 minutes or until fork comes out clean when stuck into center.

For more of a punch add garlic and hotsauce to milk. Also cover with more cheese.
 
Keep the recepies coming! I got a 7 lb. ham to serve 15 people thinking that surely I could avoid having leftovers and I still have a ton of leftovers.
 
Just make scalloped potatoes with bites sized ham in it.
 
I think we are almost to the end of our ham. Thank Goodness. At this point, I need things that don't taste so much like ham or they aren't going to eat it. LOL

For dinner tonight I have some ham and beans in the crockpot right now. I need to get to the grocery store for some diced tomatoes to put in there. I thought I had a can in my pantry put I can't find it.

For lunch today - I think I'm going to make some scrambled eggs with ham and cheese.
 
I just spent most of the day yesterday trying to use up my hame leftovers.

I made a a pot of navy bean soup with the ham bone, 4 quiche lorraines (pretty much the same recipe as pp), a dish of mac and cheese with ham mixed in, and a scalloped potatoes with ham casserole. I froze everything except the soup and 1 quiche.

I am going to make this soup later on today. I am going to use ham instead of the chicken.

Cheesy Chicken Chowder

2 c. chicken broth
2 c. diced potatoes
1 c. diced carrots
1 c. diced celery
1/2 c. diced onion
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 c.(1/2 stick) butter or margarine
1/4 c. flour
2 c. milk
2 c. shredded cheddar cheese(8oz)
2 c. diced cooked chicken(you could easily substitute ham or turkey)

In 4-qt. saucepan, bring chicken broth to a boil. Reduce heat and add potatoes, carrots, celery, onion, salt and pepper; simmer, covered, 10 minutes.

Meanwhile, in a medium saucepan, melt butter; add flour and mix well. Gradually stir in milk; cook over low heat until slightly thickened. Stir in cheese and cook until melted. Add cheese mixture and chicken to vegetable mixture. Cook, stirring over low heat until all ingredients are heated through.

This recipe freezes GREAT for an awesome lunch soup!! Excellent served with crusty bread to

DebbieB, mine is still in the fridge too. I think I'm going to wrap it up and freeze it today.
