Guacamole Recipe

We are having our DS and his girlfriend to dinner this weekend, and I found out her favorite appetizer is guacamole and tortilla chips. There seems to be a lot of different ways of making it. I was wondering if anyone has a favorite recipe they could share with me. OR, can you recommend a store bought brand that is good? Thanks! :)
 
Make it yourself--it's so easy and sooooo much better than store bought. When I make mine I scoop out 2 or more avocados and I add chopped onions, diced tomatoes, garlic powder and lemon juice. Don't ask me the quantities as I've no idea.:) Also, salt and pepper to taste. SO easy and so yummy.
 
I do pretty much as PP said. A couple of Avocados chopped, a couple of tomatoes (I use roma) chopped, I used green onions chopped, salt, pepper, chopped jalapeno pepper (without seeds)
Garlic, cumin, lemon juice.

I don't use an exact quantities, just throw some in.

I get rave reviews.

2 avocados
Finely diced onion (eyeball the amount--I'm guessing I use 1/8 cup)
1/2 medium tomato, seeded and finely diced
1 jalopeno, seeded and finely diced
Lime juice to taste (we like it citrusy, so I'd guess 2 tbls., at least)
Cilantro to taste (I'd guess we use 2 tbls.)
Kosher salt or sea salt, to taste

Combine in a food processor to your desired texture. Sometimes if we want it chunky, I just mash the ingredients together with a large fork.

You can eat right away, but I prefer to let sit for at least an hour for the flavors to combine a little better. If you let it sit, you want to cover or the guac will start getting dark.
 

For ease I use very ripe coarsely mashed avocados, onion powder, and salt. All to taste. That's it. It is delicious, and you can really taste the avocado.

If I want to make it more difficult, I use finly grated onions, some chopped onions, a few chopped tomatoes, a little lime juice, salt, a little garlic powder, and some hot sauce. Just as good, maybe slightly better, but more work.

I don't know what the Mexican restaurant that we frequent uses in theirs, it looks like it is a very light green, maybe mayo?:scared:
 
I do the same basic recipes as everyone else here (although I usually use lime juice), but in a pinch I have just smashed avocados with a bit of garlic powder. It's still good.

If you want a good store bought kind, there is one that is sold in the fresh produce sections in a cardboard-like package and it comes in pouches. I can't remember the name for the life of me. But it is very tasty and good quality.
 
For the avocado, may I recommend the Hass variety. This probably goes without saying.

he serves it chunky, more like a salsa than a true guacamole

For the avocado, may I recommend the Hass variety. This probably goes without saying.

Probably, but I'm glad you mentioned it. Florida avocado's are worthless.
 
for each avocado I use a TBS of lime juice, and 2 TBS of well drained fresh salsa (from the refrigerated section, usually near the specialty cheeses, I use the Margaritaville med salsa) and a good dash of salt.

I mash about 3/4 of the avocado and finely chop the rest.
 
The McCormick Produce Partners guac seasoning packet is really quite good. It is better than many restaurants.
 
I get raves about mine. Four or five ripe avacados(buy them ahead and let them ripen as the weekend is a horrible time to find ripe ones), mashed coarsely with a potato masher. Add lemon juice, garlic salt, finely chopped tomatoes(squeeze out the liquid) and about 1/4 cup chopped sweet onion. Put lemon juice on top to keep it from browining. Make about a hour prior to serving and refrigerate. I've also been known to mash the avacados, spoon in several serving spoonfulls of Trader Joes party salsa and add lemon juice.

This is my FAVORITE kind of Guac!!!

For actual measurements:

2 avocados, cut into chunks
2 tbsp red onion, chopped
1/4 cup tomatos (I use canned RoTel)
1/2 orange, juiced
1 lime, juiced
fresh cilantro, chopped, to taste

Mix together well: refrigerate until needed.

Sometimes I add a little bit of jalapeno to the recipe for heat.

If you decide to go with store bought, Trader Joe's "Avocado's Number" guacamole is pretty good. It is in their refrigerated food section. It is packaged as two air-tight plastic pouches in a small box. If you only use one, you can freeze the other -- it will keep for a couple of months in the freezer.
 
I mash a few avocados and add in a bit of my favorite salsa. If I want it a little spicier I add in some tobasco sauce. Most people add lemon juice but I don't like the taste. What I do is put the avocado seeds on top of the guac while it is in the fridge and it doesn't turn brown. Let it sit overnight so the taste can intensify. Guac is my favorite!!!!:cool1:

I agree! I love this stuff. I add chopped onions to it and YUM!
 
If anyone is ever up for a different, but oh so yummy taste, try adding some dill to your guac. We were at a Mexican restaurant where they make the guac at your table. When the guy started putting fresh dill in I told him Mexicans around the world would revolt! I also thought I just paid a lot of money for him to ruin my favorite dip. Turned out to be was fabulous and we almost always add dill now.
 
I got my guac. from a friend in college whose dad was a chef..yum! :cool1:

Avocados, mashed with fork
Finely chopped onion
Tomatoes (I use roma, too!)
Woresteshire (I Know I spelled that wrong!) sauce
Garlic Powder
Lemon juice
A little bit of honey (balances the other flavors really nicely)
Salt and pepper
