I've got the spaghetti, tacos, burgers, meatloaf but, if someone has more ideas for plain ole ground beef, I'd be more than happy to hear them!

Here are a few ideas that I use for gr. beef : Use the Lipton Pasta Sides mixes (I use the stroganoff). Prepare according to directions & add browned gr. beef -quick & easy. Another idea is to add a can of cream of mushroom along with a can measure of milk to browned gr. beef-pour over boiled or mashed potatos,noodles or rice. Mind you these recipes are a lo-carbers nightmare, but if you're not concerned about that these are some quick & easy ideas.

Barbecue Cups

Biscuit Cups
2 cups Bisquick® baking mix
1/2 cup cold water
1 pound ground beef
1/2 cup chopped onion
1 clove garlic -- crushed
1/2 cup barbecue sauce
1/2 cup cheddar cheese -- shredded

Heat oven to 400 degrees. Prepare biscuit cups.
Cook and stir ground beef, onion and garlic in skillet over medium heat until beef is brown. Drain. Stir in barbecue sauce. Heat through.
Spoon beef mixture into cups. Sprinkle with cheese.
Bake until crust is golden brown, about 15 minutes.
Biscuit Cups: Mix Bisquick and cold water until soft dough forms. Beat vigorously 20 strokes.
Drop by spoonfuls into 12 ungreased medium muffin cups. Press dough on bottom and up sides of each cup with floured hands.

Bubble Pizza

15 ounces pizza sauce
2 tubes refrigerated buttermilk biscuits
1 1/2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese

In a skillet, brown beef. Drain. Stir in pizza sauce.
Quarter the biscuits. Place in a greased 13x9" baking pan. Top with beef mixture.
Bake, uncovered, at 400 degrees for 20-25 minutes. Sprinkle with cheeses.
Bake 5-10 minutes longer or until cheese is melted. Let stand 5-10 minutes before serving.

Enchilada Casserole

1 can condensed cream of chicken soup
1 can condensed cream of mushroom soup
9 ounces enchilada sauce
1 1/2 cups shredded cheddar cheese
1/2 cup onion -- chopped
12 soft corn tortillas

Brown meat and garlic. Stir in soups and enchilada sauce. Simmer.
Combine cheese and onion.
Quarter tortillas.
Line a greased 13x9" baking dish with half of the tortillas. Top with half beef mixture, then half cheese. Repeat.
Bake at 350 degrees for 25-30 minutes. Let sit for 10 minutes before cutting.

Meatball Sub Casserole

1/3 cup chopped green onions
1/4 cup seasoned bread crumbs
3 tablespoons grated Parmesan cheese
1 pound ground beef
1 pound loaf Italian bread -- cut into 1" slices
8 ounces cream cheese -- softened
1/2 cup mayonnaise *
1 teaspoon Italian seasoning
1/4 teaspoon pepper
8 ounces shredded Mozzarella cheese -- divided
28 ounces spaghetti sauce
1 cup water
2 cloves garlic -- minced

In a bowl, combine onions, crumbs and Parmesan. Add beef and mix well.
Shape into 1" balls. Place on a rack in a shallow baking pan.
Bake at 400 degrees for 15-20 minutes or until no longer pink in center.
Meanwhile, arrange bread slices in single layer in an ungreased 13x9" baking dish (all of the bread might not be used).
Combine cream cheese, mayonnaise, Italian seasoning and pepper; spread over bread. Sprinkle with 1/2 cup mozzarella.
Combine sauce, water and garlic. Add meatballs.
Pour over cheese mixture. Sprinkle with remaining mozzarella.
Bake, uncovered, at 350 degrees for 30 minutes or until heated through.

NOTES : * Do not use light or fat-free mayonnaise.

Meatballs Hawaiian

1 pound ground beef
1/2 teaspoon salt
1/4 teaspoon ground ginger
1 egg
1 teaspoon water
1/4 cup flour
3 tablespoons vegetable oil
14 ounces pineapple chunks in juice
1/4 cup firmly packed brown sugar
2 tablespoons cornstarch
1/4 cup cider vinegar
1 tablespoon soy sauce
2 green peppers -- seeded, cut in strip
Hot cooked rice

Mix ground beef lightly with salt and ginger. Shape into 16 balls.
Beat egg slightly with water. Dip balls in egg mixture, then in flour to coat well.
Brown in oil in a large frying pan. Remove with slotted spoon and set aside.
Drain juice from pineapple into a 1 cup measure, add water to make 1 cup. Stir into drippings in pan.
Mix brown sugar with cornstarch, vinegar and soy sauce. Stir into pineapple-juice mixture.
Cook, stirring constantly, until sauce thickens and boils 3 minutes.
Arrange meatballs, pineapple chunks and pepper strips in separate piles in pan. Stir each gently to coat with sauce, cover.
Simmer 10 minutes or until meat balls are cooked through. Serve over rice.

Zesty Italian Crescent Casserole

1 pound lean ground beef
1/4 cup chopped onion
1 cup prepared spaghetti sauce
1 1/2 cups shredded mozzarella or Monterey cheese
1/2 cup sour cream
1 can refrigerated crescent dinner rolls
1/3 cup grated Parmesan cheese
2 tablespoons butter or margarine -- melted

Heat oven to 375 degrees.
In a large skillet brown the ground beef and onion, drain. Stir in spaghetti sauce, heat thoroughly.
In medium bowl combine mozzarella cheese and sour cream.
Pour hot meat mixture into ungreased 12x8" (2 quart) baking dish or 9 1/2- 10" deep dish pie pan. Spoon cheese mixture over meat mixture.
Unroll dough over cheese mixture.
In small bowl, combine Parmesan cheese and butter. Spread evenly over dough.
Bake at 375 degrees for 18-25 minutes or until deep golden brown.

Bacon Cheeseburger Rice

5 bacon strips -- cooked and crumbled

In a large saucepan over medium heat, cook the beef until no longer pink. Drain.
Add water, barbecue sauce, mustard, onion and pepper. Bring to a boil.
Stir in rice. Sprinkle with cheese. Reduce heat. Cover and simmer for 5 minutes.
Sprinkle with pickles and bacon.

1/4 cup celery -- coarsely chopped
1/4 cup green pepper -- coarsely chopped
10 1/2 ounces tomato soup
3/4 cup water
2 tablespoons lemon juice
2 tablespoons brown sugar
1 teaspoon dry mustard
1/2 teaspoon salt
1 teaspoon Worcestershire sauce

Lightly grease a 2 1/2 quart casserole dish with tight cover.
Combine and mix lightly the first 6 ingredients. Shape into 1 1/2" balls and put into casserole.
Heat butter or margarine in skillet. Add onions, celery and green pepper. Cook (stirring frequently) until celery is limp.
Remove from heat and add soup, water and seasonings (stirring constantly). Simmer 5 minutes.
Pour tomato sauce mixture over meat balls, cover and bake at 350 degrees for 1 1/2 hours.

Meatball-Stuffed French Loaf

1/2 pound ground pork
2 eggs
1/2 cup fine dry breadcrumbs
1/2 cup grated Romano cheese
5 tablespoons chopped parsley
1/2 teaspoon salt
1 package dry spaghetti sauce mix with mushrooms
2 tablespoons butter
8 ounces tomato sauce
1/2 cup water
1 round loaf French bread
Grated Romano cheese

Combine beef, pork, eggs, bread crumbs, cheese, 4 tablespoons parsley, salt and 2 tablespoons dry sauce mix. Shape into 20-24 balls, about 1 1/2" in diameter.
In a wide frying pan over medium heat, melt 1 tablespoon butter.
Add 1/2 of meatballs and cook, shaking pan to brown meatballs on all sides. Remove and set aside.
Melt the remaining butter, brown remaining meatballs, remove from pan and set aside. Discard any pan drippings, then add remaining dry sauce mix, tomato sauce, and water. Heat until bubbly.
Return meatballs to pan, cover and simmer 25 minutes.
Meanwhile, cut off top third of bread and scoop out insides, leaving shell about 1" thick.
Heat in 350 degree oven for 10 minutes.
With slotted spoon, transfer meatballs into warmed bread. Garnish with remaining 1 tablespoon parsley.

Pizza Casserole

Brown beef with onions and drain. Season with salt and pepper.
Mix pizza sauce with macaroni and meat mixture.

Ending with cheese on top. Bake 30 minutes at 350 degrees.

Rio Grande Rice Bowl

1 cup chopped onion
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon garlic salt
1 cup raw white rice
15 1/2 ounces can corn -- rinsed
15 ounces can tomato sauce
2 small zucchini -- diced

Cook beef, onion, chili powder, cumin and garlic salt in a large nonstick skillet 4-5 minutes until browned, breaking up clumps of meat with a wooden spoon.
Stir in rice and 1 1/2 cups water. Bring to boil, reduce heat, cover and simmer 10-12 minutes until rice is almost tender.
Stir in corn, tomato sauce and zucchini. Cover and simmer 8 minutes more or until rice and zucchini are tender.

Tater Tot Casserole

1 can cream of chicken condensed soup -- (10.75 ounces)
1 can cream of mushroom condensed soup -- (10.75 ounces)
1 1/2 cups milk or sour cream or mixture of the two
1 pound tater tots
1/4 pound Cheddar and Monterey Jack cheese

Preheat oven to 375 F.
Brown ground beef in medium saucepan. Drain.
Add soup and milk (and seasonings, if desired). Mix together and heat on medium-high setting. Stir frequently to avoid scorching. Add 3/4 of cheese and continue to stir until cheese has melted.
In 9 x 13-inch baking dish, arrange tater tots in single layer on bottom.
Pour soup mixture over the top, spreading evenly over all tater tots. Sprinkle remainder of cheese over the top.
Bake for 25 30 minutes or until centre is bubbly.

Mexican Pie (TNT)

instant mashed potatoes (for 6)
1 egg -- slightly beaten
1/4 cup green onions with tops -- sliced
1 pound ground beef
1 medium onion -- chopped
8 ounces tomato sauce
1/4 cup sliced ripe olives
3 teaspoons chili powder
1/4 teaspoon salt
1/4 teaspoon garlic powder
4 ounces shredded cheddar cheese

Heat oven to 425*. Grease 9 inch pie plate. Prepare mashed potatoes as directed, except decrease water to 2 cups and omit milk. Stir in egg and green onions. Spread and press potato mixture along bottom and sides of pie plate. Bake 20 to 25 minutes or until light brown. Cook ground beef and onion; stir and brown. Drain. Stir in remaining ingredients (except cheese). Cover and cook on low 5 minutes. Spoon into shell. ** Top with cheese. Bake 2 to 3 minutes.

** If planning on freezing, stop here. Wrap and freeze. Place remaining cheese in freezer bag and attach to pie plate. To prepare for serving, thaw. Bake in oven until heated through. Add cheese and bake an additional 2 to 3 minutes.

Chili Mac

Brown ground beef, onion, and garlic in a 3 quart saucepan; drain. Return beef mixture to saucepan. Add tomatoes, water, tomato sauce, and seasonings; bring to a boil. Reduce heat; cover and simmer 10 minutes. stir in uncooked macaroni and kidney beans. Bring to a boil; reduce heat to medium. Simmer 9 to 10 minutes or until macaroni is tender, stirring occasionally.

Sweet and Sour Meatballs (TNT)

20 ounces pineapple chunks in juice
1/3 cup water
3 Tablespoons vinegar
1 Tablespoon soy sauce
1/2 cup packed brown sugar
3 Tablespoons cornstarch
1 large green pepper -- cut into 1" pieces
meatballs -- cooked

Drain pineapples, reserving juice. Set pineapples aside. Add water to juice to measure 1 cup; pour into a large skillet. Add 1/3 cup water, vinegar, soy sauce, brown sugar, and cornstarch. Stir until smooth. Cook over medium heat until thick, stirring constantly. Add pineapple, meatballs, and green pepper. Simmer, uncovered, for 20 minutes, or until heated through. Serve over rice.

Taco Ring (TNT)

1/2 pound ground beef -- cooked and drained
1 package taco seasoning mix
1 cup shredded cheddar cheese
2 Tablespoons water
2 packages refrigerated crescent rolls
1 medium green bell pepper
1/2 head lettuce
1 medium tomato
1 small onion
1/2 cup whole pitted black olives
1 cup salsa
sour cream

Preheat oven to 375*. Combine meat, seasoning mix, cheese, and water. Arrange crescent rolls in a circle on a pizza stone, with bases overlapping in center and points to outside (there should be a 5 inch circle in the center). Using a scoop, spoon meat mixture over rolls. Fold points of triangles over filling and tuck under base at center (filling will not be completely covered). Bake 20 to 25 minutes or until golden brown.

Using v-shaped cutter, cut off top of bell pepper. Shred lettuce and cube tomato. Chop onion. Slice olives. Place bell pepper in center of ring; fill with salsa. Mound lettuce, onion, tomato, and olives around pepper. Garnish with sour cream.

Taco Soup (TNT)

1 pound ground beef
1 medium onion -- chopped
1 clove garlic -- minced
1 can whole kernel corn
1 can pinto beans
1 can red kidney beans
1 large can diced tomato
1 can tomatoes with green chilis
1 package taco seasoning mix
1 package Hidden Valley Ranch dressing mix

Mix the ground beef, onion, and garlic together, brown, and drain. In a large pot, combine meat mixture with rest of ingredients and enough water to cover. Bring to a boil; reduce heat and simmer for 1 hour (or put in crock pot).

Optional: Add cheese just before serving.

We really like the Tater Tot Casserole that Meriweather posted, but the version I got didn't include any cheese & calls for ~ a half pound of peas layered on the meat. Also, the only thing that needs to be pre-cooked is the meat.

I assume you already make Hamburger BBQ/Sloppy Joes & chili, but what about Shepherd's Pie? I have a couple of recipes if you need one. I posted a couple others below.

This one is good with just the meatballs if you want to skip the sausage:

Company Sausage & Meatballs
2 lb hamburger
½ c Parmesan cheese
¼ c bread crumbs
½ tsp garlic powder
dash pepper
1 c oatmeal
2 eggs
1 tsp salt
½ tsp oregano
30 Jimmy Dean links, skinless
32 oz catsup
¼ c brown sugar
1 tsp oregano
1 tsp mustard
¾ c BBQ sauce
½ c cider vinegar
1½ tsp garlic powder
2 tsp Worcestershire sauce
garlic, minced (opt)
onion, chopped (opt)
Combine hamburger, cheese, crumbs, garlic powder, pepper, oatmeal, eggs, salt & ½ tsp oregano to make meatballs. Use a melon baller to make meatballs. Microwave meatballs on HIGH ~ 20 at a time – cover with wax paper. Repeat with sausages ~10 at a time. Combine remaining ingredients & simmer with sausage & meatballs 6 hours. Serve with noodles, rice or good bread. Yield: 60+ meatballs & 30 sausages

I like this one at this time of year for a lighter meal:

Taco Salad
1 lb ground meat
¾ c water
1 pkg taco seasoning
1 head lettuce
2 c kidney beans
1 - 2 c Cheddar, grated
2 tomatoes, chopped
1 - 2 c carrots, grated (opt)
½ bottle French dressing
taco chips, crushed
Prepare meat as for tacos with water & seasoning; chill. Toss with lettuce, cheese, tomatoes & carrots. Pour dressing over all & mix. Use plain chips or Doritos.
 
Have you tried runzas? They're the best! Super easy and really good.

1 (3 pound) package frozen white bread dough -- I like Rhodes Texas Size roll dough because it makes the runzas the perfect size. (Just be sure to roll them out thin!)
1 1/2 pounds ground beef
1 medium head cabbage, shredded
1 pound shredded mozzarella cheese
salt and pepper to taste
vegetable oil


Thaw out the bread dough and set aside. (If you're not using frozen roll dough, then cut each loaf into 3 pieces)

Brown beef and cabbage in large skillet, adding salt and pepper to taste. You can add a little bit of sweet onion to the skillet, too. (I don't because my boyfriend is onion-phobic, but it is good with them!)

Roll the dough out into squares. (It needs to be thin)

Place a spoonful of the beef/cabbage mixture on the rolls and top with a little bit of cheese.

Fold over and pinch sides of dough to seal, brush with a little bit of vegetable oil.

Place on a baking dish or cookie sheet and bake at 350 for 35-45 minutes or until golden brown.

I can get my extremely picky nephew (8) and my even pickier boyfriend (22) to eat these and they both love them! They're good with oven fried potatoes and a bunch of ketchup. (my nephew likes them with barbecue sauce, too.)

Don't have an exact recipe, but this is fav from my childhood. My grandmother made it all of the time

Layered Dinner

thinly sliced potatoes
thinly sliced onions
green bell pepper
canned sliced stewed tomatoes
ground beef
cheddar cheese

layer in casserole dish, adding salt pepper (garlic if desired) and baked at 350 for about 45 min

My family's fav:
Sweet and Sour Beef
1lb. ground beef 2Tbsp. cornstarch
1 sm. green or red pepper, chopped 1/4 cup vinegar
1 med. onion, chopped 3Tbsp. soy sauce
1/3 cup firmly packed brown sugar 1 can pineapple chunks

Cook beef until lightly browned. Add the pepper and onion and saute, stirring often, until just tender. Blend together remaining ingredients including pineapple juice but not chunks, and stir sauce into beef and cook, stirring, until thickened. Add pineapple and heat through. Serve over rice.

Hachis Parmentier (Meat and Potato Pie)
4 pototoes 1 bay leaf
3Tbsp. butter 1/2 tsp. dried thyme
1 cup finely chopped onion 1/4 cup tomato paste
1 sm. clove garlic, finely minced 1/2 cup milk
1-1/2lbs. ground beef 1/8tsp. nutmeg
salt & pepper 1/4 cup grated Parmesan

Peel potatoes, cutting each into six equal peices. Put in saucepan and add water to cover. Cook about 20 minutes or until tender. Melt 1 Tbsp. butter in saucepan and add onion and garlic. Cook, stirring, until onion wilts. Add beef and cook, breaking up the lumps. When meat has lost its raw colour add s&p to taste, bay, thyme, and tomato paste. Cover and cook about 20 min. Discard bay leaf. Preheat broiler to high. Drain potatoes and mash. Add remaining 2 Tbsp. butter, stirring until melted. Heat milk and add gradually to potatoes, beating with wooden spoon. Add salt to taste and nutmeg. Spoon beef into broiler safe baking dish (8x11-1/2x2) Spoon potatoes over meat and smooth with spatula. Sprinkle with the cheese. Place dish under broiler and broil about 5 minutes or less until nicely browned.

Meatballs in Cherry Sauce
Cherry Sauce
1 can pitted dark sweet cherries
2Tbsp. soy sauce
1/4 cup orange juice
1/4tsp. each Worcestershire sauce & orange or lemon rind
3Tbsp. each brown sugar, vinegar & lemon juice

Drain cherries and put syrup in large saucepan. Add remaining ingredients and mix well. Cut cherries in half and add to mixture. Cook, stirring, until clear and slightly thickened.

Meatballs
1 lb. ground beef 2 Tbsp. milk
1/2 cup bread crumbs 3/4 tsp. salt
1 egg 1/8 tsp. pepper
2 Tbsp. minced onion 1/4 tsp. garlic salt
1/4 cup finely chopped water chestnuts 1tsp. Worcestershire

Prepare sauce and set aside. Mix all ingredients well and shape in about 3 doz. small balls. Brown slowly without added fat. Drain well, add to sauce and simmer about 10 minutes. Serve with rice.
 
I make a very easy form of sloppy joes

1lb hamburg
small onion
1t chili powder
salt/pepper to taste
1 can of tomato soup

brown hamburg and onions with chili powder. drain fat. add soup and heat on low until desired temp. serve on hamburg rolls or anything else you have hanging around.

I usually use a medium onion and at least double the chili powder, but start with the mild and build on it.
 
Chuckwagon
1 lb ground beef
8 oz pkg noodles, cooked
1 can creamed corn
1 can cream of chicken or celery soup
1 can cream of mushroom soup
1 chopped onion
1 chopped green pepper
grated cheddar

Cook beef with onion and green pepper. Drain. Stir in soups and corn. Add to noodles. Bake @ 375 for 35 min. Top with cheese and bake for 10 more minutes until cheese is melted.
 
Don't forget about stuffed peppers! I don't have the recipe handy, but it is fantastic - ground meat (I use turkey as I don't eat beef), rice and spices, stuffed in a pepper, and baked in tomato sauce. YUM!:tongue:
