grilled pizza

My sister makes the best grilled pizza! Yummy - hope she's planning on making it this weekend :teeth:
 
We have friends that make it in their big pit BBQ. It's delicious!
 

I'm managing editor for a national pizza magazine. This isn't common in restaurants yet (too labor- and time-intensive) on a national level, but it is a popular consumer product. At least a half-dozen places have opened in New York City offering grilled pizza, like Scopa on the Go (27 E. 28th Street), Crispo (240 W. 14th Street) (has an awesome white clam pie). I think Several take-and-bake companies, like Nick-N-Willie's (based in Colorado), actually have instructions for grilling their products at home. The grill markings on the bottom of the crust make for one GORGEOUS pizza.

Grilling alters the texture of the crust, making the "mouthfeel" a little heartier and offering a smokier texture than traditional oven baking. If you're making dough at home or using thawed prepared dough from the freezer aisle, be sure to "dock" it -- use a fork to make small intents all over the unbaked crust. This will reduce those ugly air bubbles. Also brush your crust with olive oil for that nice browned texture, and consider sprinkling parmesan cheese on the edge of the crust as well.

What I read was to oil both sides of the dough and spray the grill with pam. Put it on while hot, toss after two minutes or so and hit it with the toppings. Take off and enjoy. I suppose you could put foil under it when you're ready to do toppings if it's messy. I want to do bbq'd chicken pizzas.
 
I do it and it is really very easy...much easier than you would think.

Spread olive oil on a cookie sheet, spread the pizza dough on the cookie sheet.
Invert the cookie sheet on the hot grill leaving the cookie sheet on the grill. after just a few minutes, take a peek to see if the dough has fallen from the cookie sheet. when it has, remove the sheet.
When the dough is done on the grill side, flip the dough and cook it on the other side. It will be crusty and easy to turn. Then return the crust to the cookie sheet, put on the fillings and ingredients and place the cookie sheet with pizza on the grill. Close lid and cook till hot.

my favorite.
Drizzle crust with heavy cream, add carmelized onions, procuitto and goat cheese.
