Gratuity included in case of large groups

When I booked a couple of ADRs a few months back, I was told that our group of 16 ( groups of 8 or more ) would have an automatic 18% gratuity added to the price. Okay, fair enough.

However, now we're contemplating getting the Dining Plan for our upcoming trip in March. So how does this automatic 18% gratuity work in a case where we use the dining plan since gratuity is no longer included on it?

You're given a receipt that shows the 18% that you are being charged for gratuity.

If you have multiple bills/tickets - all bills show an 18% on the value of the food ordered.

And so I guess in the case of a buffet, it's 18% of the usual cost of a buffet per adult / per child?

Can I ask my server to combine the 18% into one bill to hand to one person?
