Grand Cayman Islands..question regarding excursions

I was looking at booking a dolphin encounter and the jet ski tour. The dolphin encounter is about a 20 minute drive and the jet ski tour is apparently 3-5 minute walk from port. Assuming the ship docks at the scheduled time of 7:30, can I get off the ship and to the dolphin encounter by 9:00 am?

The jet ski tour is at 12:30. That is 2.5 hours. The ship leaves at 3:30. Will I be ok?

We did a 12:30pm jet ski and didn't get back until closer to 4. It was with Ebanks, and we drove to an area to get the jet skis(met them at port) Can you find an earlier? We loved ours. There are several companies. Discount excursions, Ebanks, Fat Fish, ect.... peek on trip advisor. We are going with Discount excursions next time. Ebanks had some issues with their jetskiis on our excursion.
