Graduation Open House Ideas?

I have a son that will graduate this spring. Does anyone have any easy but unique food and or themes they used at their open houses? Taco bars have been really popular lately but I'd like to do something different.

I used my daughter's (the graduate) favorite foods...so we had a huge Blimpie, chips and the specific brand French Onion dip she likes, green and black olives and pickes, and brownies (rather than a cake). We also had devilled eggs (Grandpa's recipe). Movie theatre popcorn was in two big buckets around the house and M&Ms (custom made in her school colors with her name on them and Congrats and the year.

Meat and Cheese Skewers
1 inch cubes, variety of Cheeses (we like Pepper Jack, Cheddar, Colby Jack)
Log of Summer Sausage
Sturdy wooden picks or Medium wooden skewers

Skewer cheeses, meat.
To dress it up, top with a grape tomato or prepared cheese tortellini
I stuck these in a mini watermelon for serving. Cantelope would work well, or served flat on a plate.

This is really easy. Simple if you purchase items pre-cut, I've seen packages in my deli section.

I recently did a Baked Pimento Cheese from the December or Special Christmas issue of Southern Living. It was out of this world wonderful. We almost licked the dish. Let me know if you'd like the recipe, I'm happy to pass it along.

I also serve Chicken salad on mini crossiants.

How about fondues.
Have 3 different pots-one with chocolate, the other with melted cheese, and another with oil. By each pot, have the items that can be used according to that pot-ex. by the choc. pot have pound cake, marshmallows, strawberries, graham crackers....
You could even have a smores maker.

I am just stunned that anybody plans this far in advance. I'd be cracking open a cookbook, like, the night before. LOL.
