"Good" vs. "Good for Disney"

Big River is a chain (there's another in Nashville, TN), owned by Gordon Biersch. Foodwise, it's no better/worse than any other chain. Their beers are better than the mass produced industrial Bud/Miller/Coors, but they don't compare to higher quality craft brewed beers. On its own, Big River would probably hold up. But if forced to compete with other brewpubs, gastropubs, etc., it wouldn't last very long.

There are plenty of Outbacks in Chicago.
YSH is as good or better than that, IMO thus I feel it would survive since outback does. Which is why and only opinoin how Disney resturants would fair because it call comes down t person taste.

Yachtsman might do ok in some cities, but I don't think it would survive in Chicago. Unless they served a better quality of meat. The sides and such are decent. But the main event...not so much.


Some else mentioned prices as a reason some wouldn't make it.
But prices would vary by location. Demand allows disney and Orlando area to have higher prices.
I doubt any Disney or Universal place would charge as much in different cities since the place would no longer be part of the theme but a stand alone resturant and have to compete with other stand alone resturants.
 
It's been an age since I've bothered to look at the prices of Disney places. I just don't bother, what with the plan. Whether or not the restaurants'd survive outside of Disney... no, probably none of them. But you never know...

I've been to a couple of high end establishments in Ottawa and Toronto that have been around forever and shouldn't be surviving. I've also been to plenty of chain places that are overcharging for their lifeless junk and still jumping. There's no explaining it; the market for dining can be like the market for anything else, just smoke and mirrors, fashion and foible. I've seen too many overpriced, lousy places thrive and too many good places get crushed to conclude otherwise.

Ok, I should say that I have been to Outback. But I found my filet mignon eaten at the Crew's Cup Lounge on Dec 12 (directly from Yachtsman's kitchen next door) was about the same quality as the Outback sirloin. If you had to compare that way, Yachtsman would definitely fail by comparison.

Ok, let's compare Yachtsman to Wildfire, which charges higher prices than Outback, but perhaps not as much as a Gibson's or Morton's. Comparing filet to filet, Yachtsman's filet being at Outback quality would definitely fail if it were compared to a higher end steak place for sure. Yachtsman was charging Gibson's prices for Outback quality. And that's why I think it would fail. Even if you adjusted down slightly taking it out of WDW. The price point and quality don't match.

People would go to Outback for that price point rather than Yachtsman, if both were located in the Chicago area.
