If you like outdoor seating, try either Cafe Orleans or the French Market. You might be able to get some good music played for you, and the food is good. Also, Plaza Inn has lots of outdoor seating. And you can sit there by yourself without really sticking out.

For DisneyLand the French Market Restaurant. It is outside covered seating. Food is a bit healthier. Fast service leaves more time for parks.

If the OP wil have a car or is willing to Uber/Lyft, the Anaheim Packing District might be fun. This is a sort of gourmet food court, lots of choices, plenty of seating, sometimes live music, etc. Umami Burger is next door in the Packard building. Solo dining there is not a problem. Craft beers and good burgers.
