Good Recipes to Make a Guy and His Son....

My neighbor just had her second baby! :goodvibes :goodvibes

The baby will be in the hospital for a while because he was premature (Preeclampsia) and only 3lbs, and the hospital is a good distance away. I'm assuming that mommy will be stay up there, but the new daddy and their older son will be here, and I'm thinking that it will be nice to make them a meal or two that will last/freeze well and be tasty.
Also, the now big brother was just put on a diet (and he only just turned 3!), so whatever I make I don't want to be to fatty, but still tasty enough that a 3 year old will want to eat it! I was thinking about a Shepards Pie, but I don't know what else, or if thats to fatty.... Any ideas with recipes would be much appreciated!!

ahh man, didn't see the 3 yr old on the diet... hmm, maybe a salad. I would do spaghetti. A big pot of spaghetti could last 3-4 days.
 
what about a pot of soup. Maybe vegetable, chicken noodle or chili? They can heat it up as needed and its good for several days.
 

When my DD was in the nicu. My friend made some soup minestrone..Yummy.
Also a roast chicken is good with veggies. Or a veggie lasagna and it freezes well. What a good friend you are. Kudos.
 
How about chili if you don't make it spicy. My kids love chili with bread or mashed potatoes.:confused3
 
I would say meatloaf or white chili or chicken noodle soup. You can even make a hearty spaghetti sauce, and he would just have to make noodles.

They all go a long way, and if you use ground turkey instead of red meat in the options that call for hamburger, it will be much leaner. We use that for everything...we never really eat red meat.

If you want my recipes for the soup or white chili, just pm me. For the meatloaf, make sure you use an egg or something in your mixture to hold it together. And you can even use wheat bread for the bread crumbs in it to make it healthier. And skim milk if your recipe call for it in the mixture.

Good luck...I always hem and haw over this decision when someone has a baby!
 
I'd do a baked ziti with a ground turkey meat sauce. Ronzoni Smart Taste pasta is much healthier that regular white pasta, and more palatable than wheat pasta, so it'd be a good choice for the boy.

Also good, if you have a crock pot - buy a whole chicken, season aggressively and toss it in the pot. Cook on low all day (it will be falling apart tender), pull all the chicken, toss with bottled bbq sauce. Send over some rolls, can of baked beans, and a salad, and that's a healthy dinner and they'll probably have enough chicken left over for lunch the next day.
 
How about plain ole American Chop Suey? You can make it with turkey if you want versus the hamburg. Nothing much is easier than that! And it tastes so much better the second day too! :thumbsup2

ETA: Or chicken and gravy? Boil up some boneless chicken and combine with cream of chicken soup and frozen veggies (I use peas & carrots). He can serve over bread, with a microwaved baked potato or you could include a packet of instant potatoes!

I do modify it a bit. I only use 1 package of ground turkey breast and I cut all the spices in half. I also add a full bag of frozen corn and a can of light kidney beans. For the tomatoes I use the 20 oz. can of diced and 20 oz. of sauce. This recipe makes a TON so I freeze half of it right away. It also tastes better when it sits for a day in the fridge. And it is very healthy. This is also a great recipe for potlucks or family events because you can make it ahead of time and it holds well in a crockpot.

You can also make them a tray of cornbread to go with it. I bet that would freeze too if you made an extra tray. I like this recipe:
