Hi there everyone! My husbands birthday is next week and requests a devils food chocolate cake w/choc. icing ~ does anyone have a great recipe? Thank you in advance. :D
 
Quick question.....how is "devil's food chocolate cake" different from 'regular old chocolate cake'?? I've always used the term interchangably. :o

This is our favorite chocolate cake....very dense & moist. The icing isn't overly sweet either. BTW - It's named after the family friend who introduced it to us, but I don't know if it was originally his or not.

Clyde’s Chocolate Cake
1½ c water
¾ c shortening
¾ c cocoa
3 c flour
3 c sugar
2¼ tsp baking soda
1 tsp salt
3 eggs
¾ c sour milk
1½ tsp vanilla
Cook water, shortening & cocoa until butter melts. Add flour, sugar, soda & salt. Beat 2 minutes. Add eggs & beat 2 more minutes. Add milk & vanilla; beat 2 minutes. Grease a 13x9 pan & dust with cocoa. Bake at 350 for 30 minutes. Ice with Cooked Icing recipe.


Cooked Icing
3 Tbl flour
¾ c milk
¾ c butter
¾ c sugar
¾ tsp vanilla
Cook together flour & milk. Stir constantly until thick. Cool. Add butter & beat 4 minutes. Add sugar & beat 4 more minutes. Add vanilla & flour mixture; beat until smooth. Refrigerate until spreadable.
 
i don't know the difference, just what my husband calls it i suppose. the cake & frosting sounds delicious!! thank you so much!

"Perfectly Chocolate" Chocolate Cake

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups sugar
1 3/4 cups flour
3/4 cup cocoa or Dutch processed cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla
1 cup boiling water

Oven to 350 degrees.
Combine dry ingredients in large bowl.
Add eggs, milk, oil and vanilla. Beat 2 minutes on medium speed. Stir in boiling water. (Batter will be thin.)
Pour into 2 -9" round greased and floured pans.
Bake 30-35 minutes. Cool 10 minutes. Remove from pans to wire rack. Cool completely.
Frost.

"Perfectly Chocolate" Chocolate Frosting

1/2 cup butter or margarine
2/3 cup cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla

Melt butter.
Stir in cocoa.
Alternately add powdered sugar and milk, beating on med. speed to spreading consistency.
Add more milk, if needed.
Add vanilla.
 

You know how you spend your entire life searching for the perfect this or the perfect that?? Well, I spent years searching for "The Perfect" chocolate cake, and voila . . . the recipe posted by Meriweather is "it" -- the absolutely, without-a-doubt, very best chocolate cake in the world. I've been making it for years, and my entire family and everyone I work with would agree. No get-together is complete without this cake.

There is one thing I do differently, though. I "stuff it" with a fluffy white filling, and call it Ho Ho Cake, because it reminds me of a very rich, chocolately, moist Ho Ho Cupcake.

Here's the recipe for the filling. . .

Filling

Mix well and cook 'til thick:

4 T. flour
1 c. milk

Cool. Cream together:

1 stick softened margarine
1/2 c. Crisco
1 c. sugar
1 t. vanilla

Beat cooled flour mixture with mixer 'til creamy. Add to margarine mixture and beat 'til it looks like whipped cream (takes a while).

Use decorator tip (or cone made out of freezer paper) to force filling into cake. (Stick the tip right down into the top of the cake and squeeze the filling in. You'll do this all over the cake.) Cake will plump up and sometimes split, but frosting will cover.

After stuffing with the filling, cover the whole thing with the frosting recipe posted by Meriweather.

Oh, yum!! Darn this low carb way of life, anyway.
 
From King Arthur Flour:

Devil's Food Cake

The most traditional of chocolate cakes, devil's food is marked by its dark color and dense texture.

3/4 cup (1 1/2 sticks) soft butter
1 3/4 cups Baker's Special sugar or granulated sugar
1/2 teaspoon salt
2 cups King Arthur Unbleached All-Purpose Flour
3/4 cup dutch-process cocoa
2 teaspoons baking powder
4 large eggs
2 teaspoons vanilla
1 1/2 cups milk or water
In a large mixing bowl, cream together the butter, sugar and salt till fluffy and light, beating for at least 5 minutes. In a separate bowl, whisk together the flour, cocoa and baking powder. If lumps remain, sift the mixture.

Add the eggs to the butter mixture one at a time, beating well after each addition. Mix together the milk or water and the vanilla. Add one-third of the flour mixture to the creamed mixture, then add half the milk, another third of the flour, the remaining milk, and the remaining flour. Scrape the sides and bottom of the bowl occasionally throughout this process.

Grease and flour two 9-inch round cake pans, three 8-inch round pans, or a 13 x 9-inch sheet cake pan. Wrap the pans with Magi-Cake Strips(r), to prevent doming, if desired. Bake the cakes in a preheated 350°F oven for 30 to 35 minutes (a bit longer for the sheet cake), until a cake tester inserted into the center comes out clean, and the cake begins to pull away from the sides of the pan. Remove the cake(s) from the oven, cool them for 5 to 10 minutes, then remove them from the pan (leave the sheet cake in the pan, for easiest serving). Yield: Two 9-inch or three 8-inch rounds, or a 13 x 9-inch sheet cake.

Easy Fluffy White Frosting

This buttercream frosting goes together in a snap. It's deliciously smooth and creamy.
1/3 cup (5 1/3 tablespoons) butter
1/3 cup (2 ounces) vegetable shortening
1/8 teaspoon salt
4 to 5 cups (1 to 1 1/4 pounds) glazing or confectioners' sugar, sifted
2 teaspoons vanilla extract
1/4 to 1/3 cup (2 to 2 3/4 ounces) milk
In a large bowl, beat together the butter, shortening and salt till fluffy. Add about half of the sugar, and beat slowly until well-blended. Add the vanilla and half the milk, and beat until fluffy. Continue adding sugar and milk alternately until they've been completely incorporated, and beat until the frosting is light and fluffy. Yield: sufficient frosting to frost and fill two 9-inch or three 8-inch layers.

You mean there are "actual" recipes for cake??? I thought all cakes came from a box. You know, Duncan Heines and Betty Crocker.
