Good Apple Crumb recipe

Does anyone have a good apple crumb recipe?? Apple season is upon us and the last crumb I made was dry and not very good. Thanks.
 
I have a recipe for Apple Crumb Bars that turns out very nicely. If you'd like that I'll type it up and post it.

Apple Crumb Bars

1 cup quick or old-fashioned (rolled) oats
1 1/4 cups all-purpose flour -- divided
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter or margarine -- softened
1 large egg -- beaten
4 Golden Delicious apples -- peeled, cored, and sliced
1/2 cup sugar
1/4 teaspoon nutmeg
Crumb Topping
1/3 cup all-purpose flour
1/3 cup quick rolled oats
1/3 cup sugar
1/4 cup butter or margarine

Heat oven to 350° F. Lightly grease a 15- by 10- by 1-inch baking pan.
Prepare Crumb Topping: In medium bowl, combine flour, oats, and sugar. With pastry blender or fork, cut in butter until mixture is crumbly. Set aside.
In medium bowl, combine oats, 1 cup flour, the brown sugar, baking powder, and salt. Cut in butter until crumbly. Stir in beaten egg.
Spread mixture evenly in pan.
Toss apples with sugar, remaining 1/4 cup flour, and the nutmeg.
Spread apples over oatmeal layer.
Sprinkle Crumb Topping in a diagonal pattern over apples.
Bake 30 to 35 minutes or until apples are tender.

Entenmann's Apple Crumb Cake

1/3 cup butter
4 Granny Smith apples
3/4 cup sugar
1 teaspoon lemon peel
1/2 teaspoon cinnamon
1/8 teaspoon mace
1/3 cup currants
2 1/2 cups flour
3 tablespoons sugar
1/2 teaspoon salt
1 package active dry yeast
3/4 cup water
1/3 cup butter
1 egg
1 teaspoon lemon peel
3/4 cup chopped pecans
6 tablespoons flour
1/4 cup confectioner's sugar
3 tablespoons butter
1/4 teaspoon cinnamon

Melt butter in large skillet.
Pare,core and slice apples to 1/2" pieces.
Add apples to butter and cook, stirring, 8 minutes until tender. Stir in sugar, peel, cinnamon, mace and currents. Cook 15 minutes, stirring until thickened. Cool.
In large bowl, combine 1 cup flour, sugar, salt and yeast.
In small saucepan, combine water and butter.
Heat on low flame until 120º F
Gradually add to dry ingredients.
Beat 2 minutes. Beat in egg, peel and 3/4 cup flour.
With mixer, beat 2 minutes. Add remaining flour, stir in. Cover, let rest 20 minutes.
Grease 2 baking sheets.
Place half the dough on well floured work surface, roll to 14"x12". Place on sheet.
Spread 1/2 filling lengthwise down center of the dough.
Starting about 3/4" for filling, cut 1" wide strips diagonally from filling to edges of dough.
Alternately fold opposite strips of dough at angles across filling. Fold ends over filling.
Brush large piece of waxed paper with vegetable oil. Loosely cover sheet. Top with plastic wrap. Refrigerate 2 hours. Uncover, let stand at room temperature 10 minutes.
Preheat oven to 375º F.
Combine rest of ingredients for topping. Sprinkle over loaves.
Bake 30-25 minutes until lightly browned. Remove from sheet. Cool.
 

Here's the recipe, from our local Rosie's Bakery. I've made these a few times and people really enjoy them.


Apple Crumb Bars

Filling
3 1/2 C. peeled, sliced (3/8" thick) apples (3-4, preferably McIntosh)
7 T. apple cider or juice, or as needed
2 T. fresh lemon juice
3/4 t. ground cinnamon
1/4 t. salt
2 t. cornstarch

Crumb Layers
1/2 C. plus 2 T. all-purpose flour
1/4 C. (lightly packed) light brown sugar
2 T. sugar
3/4 C. quick-cooking oatmeal
1/8 t. salt
5 T. unsalted butter, chilled, cut into 5 pieces


In a small saucepan, simmer the apples, 3 T. of the cider, the lemon juice, cinnamon and salt over medium heat just until apples lose their crispness, 3-4 minutes.

Drain any jucie into a measuring cup and add enough of the remaining cider to measure 1/4 C. Transfer the apples to a small bowl.

Dissolve the cornstarch in the cider, then pour this mixture into the small saucepan. Cook, stirring constantly, over medium-low heat until thickened, 2-3 minutes. Pour this mixture over the apples and toss to coat. Refrigerate while you prepare the crumb layers.

Preheat oven to 425 deg F. Lightly grease an 8" square pan with butter.

Place the flour, both sugars, the aotmeal and salt in a food processor and pulse briefly 5 times. Add the butter and pulse 8 to 10 times until it is incorporated evenly. Pat half the crumb mixture firmly over the bottom of the prepared pan.

When the apple mixture has cooled, cut the slices into 1/2" pieces. Spread the apple mixture over the base and sprinkle the remaining crumbs over the top.

Bake the bars until the crumbs are golden and the apple mixture is bubbling along the sides of the pan, about 25 minutes.

Cool bars completely then refrigerate to chill before cutting. Makes 9 to 12 bars.
