Going Camping! Need cheap meals and essentials

I had to go and get my recipes--here are a few:

Campfire Elephant Ears
Take refriderator bisquits---and put them on the long forks and cook in the fire till golden brown—roll in butter and sprinkle w/ sugar and cinnamon!

Walking Tacos
Make your hamburger meat ahead of time and freeze in a freezer bag. At the campsite you can either put a pan on and dump the meat in and stir to warm up, or boil water and put the bag in the water till its warm. Take along the individual bags of Fritos—crunch them up—scoop in the meat and add whatever toppings you want and you can eat these right out of the bag!

Hobo’s
Make foil packets—put a hamburger patty in, add sliced potatoes, carrots (peppers or onions if you like) add 2 tablespoons of butter and a little water and seasonings you like—wrap up and put in the fire. (not directly in the fire but on hot coals or the very outer edge but not outside) Cook till meat is done.

Omelet’s
Add however many eggs to a freezer bag and mix it up—add your toppings (cheese,etc)—bring water to a boil and put the bags in the boiling water and they will cook and make a perfect omelet.

Campfire Pizza’s
You can take pita bread or tortillas—add some pizza sauce, cheese, and whatever other toppings to one side—fold it and wrap in foil and place in a wire handheld campfire basket or on a grate or pan over hot coals until cheese is melted.

**Kids LOVED the Elephant ear one!! Don’t roll the biscuit—just place on the stick as you would on a pan and put it near the fire—just not directly in the flames!!!!
 
We like to do chili cheese dogs. We wrap the hot dog, bun and topping (we use chili, cheese and onions) in foil and throw on the coals.
 
If you are going to have a pot you can boil water in to sit on the grate over the fire, you can make eggs-in-a-bag for breakfast. Prepare them before you leave home. Scramble a couple of eggs and mix in as many ingredients as you might like in an omlette. Sausage (fully cooked), bacon bits, cheese, tomatoes, chopped mushrooms, fresh herbs, S&P, whatever. Put the mix, uncooked, into a good Ziploc bag, the kind you know will seal really really well, and toss it into the cooler. Make an individual baggie for each person, so everyone can have just what he or she wants in their eggs.

Next morning, when you are camping, bring the water to a boil, and toss the baggies in, being sure to check that they are still well sealed. Be sure you bring tongs or something to fish them out again. Let them cool, massage the bag a little to break up the eggs a little, then open the bag and dump them onto a plate. Serve with campfire toast! :thumbsup2

The rubbermaid box is a GREAT idea! I knew I was forgetting something and it was silverware, napkins, tablecloths, etc! :cool2:


3boymthr - yes we're able to have fires!

My sis in law has a lot of camping cooking equipment, so we'll be able to cook a lot of the things that you all suggested!!!

There is a thing called a Mountain Pie Iron (Google it for pics) and you open it up and butter the inside of it lightly to prevent sticking and to give the crust a nice crunch :)

OMG, I want one of these now. I never knew they existed. Where have I been? :rotfl:
