I am gluten intolerant and ate there on my honeymoon. They called a few days before to ask about preferences and confirmed a gluten free meal for me. Really tell them exactly what you like, they can avoid certain ingredients if you're not big on, say, mushrooms, and really customize it to be what you enjoy.
When we got there they had a special gluten free menu for me to choose from and I usually had 2 options with each course. They give three breads during the meal and they made a special gluten free version of each for me. To be honest it wasn't the best gluten free bread I've ever had but I appreciated the effort! Really most of their courses center around some sort of meat/fish so there isn't a ton of gluten normally. It's all smaller super complex plates so it's interesting food and changes a lot. For dessert they made a raspberry flourless chocolate cake for me but I couldn't have any of the regular desserts. The only place I really noticed it was a gluten free meal was with the cheese board. Overall it was a great experience and they completely understood what I needed! There were a few bites in the meal that were the best version we've ever had of that type of food (there's a salmon that's cooked to 3 different temperatures and it's mindblowing!) but there are a few things that are kind of strange (we're pretty sure we were served some sort of pureed pheasant feet at one point!).
