Gluten free recipes

Hi all!

BH5 here.


As some know, thanks to an autoimmune disease I was diagnosed with I have to watch my gluten intake (did not test positive for celiac or non-celiac gluten insensitivity, but my numbers were at a level my doctor wanted me to just monitor it) and one of my best friends was just diagnosed celiac. I also have a cousin who is vegan and has gluten issues as well.


Anyone got any great recipes to share and that I can pass along? Especially with the holidays coming up, I want to make sure there are options.

My mum is a diagnosed coeliac and so was my gran, both in the 1970's, so Ive grown up being very aware of gluten free foods and cooking and baking gluten free. What kind of recipes are you looking for?

Coeliac disease is very common in Ireland, some theories suggest its related to the Famine in 1850. As a result there is a alot more awareness about gluten free foods here. The Coeliac Society of Ireland is a great resource and they now have an App. https://coeliac.ie/

As someone who’s been to Ireland and is Irish I never realized it!

Well we are all Italian lol but we know gluten free pasta is so much more readily available.

In terms of my friend, they LOVE to bake so this has crushed them. They have baked everything from any bread you can name to any cake you can name to everything in between!

Growing up gluten free baking was big in my family, I'm talking about in the 1980's and 1990's when there wasnt as much store bought gluten free foods available.

In Ireland we can get gluten free flour, which is a prepacked mix of rice flour, potato flour and other ingredients. Once you find gluten free flour, you can basically use it as you would normal flour. It takes a bit of patience, but we have made so much cakes, cookies, cupcakes, desserts etc. You dont have to stop baking just because you are on gluten free diet.

We knew about rice flour but not potato! My friend and I were doing so much research after they told me about their diagnosis so I will definitely pass the message along!

Ugh, my great grandparents were from Ireland, I’m a carrier, 2 of my kids have it, my sister, aunt and cousins are carriers, my Cousin’s kids have it too.

The theory suggests that areas such as the West of Ireland and the South of Ireland which were hardest hit by the Famine, have a higher % of people with Coeliac disease.
 
This is my favorite gf flour https://steinerscoffeecakeofnewyork.com/product-category/all-purpose-flour-blend/ and their baked products are good, but you can find gf flour in the grocery store. Replace your soy sauce with tamari, any bread product will need to be toasted, no more pringles, Rice Krispies are not gf. Honestly the easiest way is to just eat real food, protein, produce, potatoes, rice, quinoa, and check labels, a lot of processed food has hidden gluten (like condensed cream soup). Corn starch instead of flour for thinkeners.

We were from very young to read the food labels on everything. Its so surprising the hidden gluten in things. Now a days its so much easier, you just really need to change brands of things, as theres so much more availability now.
 
I have been GF for 7 years now. Our favorite for pancakes is Pamela’s GF baking mix. Mom’s place GF has a bunch of great mixes for baking https://momsplaceglutenfree.com. Cup 4 cup is also a great all purpose Gf flour that you can use in place of wheat flour for most baking recipes.

I have found Canyon bread to be my favorite which I can find at Publix. Make sure you watch sauces as they can be thickened with flour or have soy sauce added which usually isn’t GF.

It is much easier every year to be GF as there are more and more options of commercially produced foods, Nabisco makes GF Oreos now which are awesome.

I’m Irish and I’m just discovering this! No wonder I have some issues in regards to my autoimmune disease with gluten

DM is Celiac so I have a little experience. Cheerios are gluten free. I crush them up and mix with butter to make a substitute grahm cracker crust for pumpkin and key lime pies. You smash the mixture into a pie tin and bake till it's brown. Let it cool then bake as normal. Is it better than a grahm cracker crust? No. Is it still delicious? Absolutely!

Biggest thing for us is to make things from scratch as much as possible so you know what's in it. It's surprising how many store-bought ice creams have wheat products in them.

I either buy gf graham crackers or buy gf graham cracker crumbles. Oh and gf ginger snap cookies are awesome.
