Is there an established thread regarding gluten free options at various sit down and counter service restaurants throughout the parks? We will have a member of our party with celiac disease traveling with us around Christmas 2017. Would like to be prepared.

Follow the other posters link. Also, note on your dining reservations that you have a person with this. There is a certain section that you can check boxes for allergies (peanut, tree nut, gluten, fish, shellfish, soy, etc). You would check the gluten box. Make sure then when you check-in for your meal that you note it again, and they'll have the chef come out and speak with you.

For CS and QS, just go up and ask to see a manager and they will help you, most have separate menus behind the counter for allergies. You just have to ask.

The only issue I have with hers is she does not have any menus - so unless you are interested in eating what she ate it's not all that helpful in deciding. Like, I don't eat fish, so any place where that was her main thing doesn't help me.

I will look at her reviews and if I like other things I will see if glutenfreedairyfreewdw has the menu to see what non-fish options they have. But her site alone is not what I have found most helpful overall.

To each their own. She does photograph menus and posts them within her reviews, so I found her site quite helpful regardless of whether I would eat the specific dish she chose.
 
I completely agree with noting it in reservations and confirming upon check in. We have had 5 visits to WDW since I was diagnosed (just returned last week), and one of the reasons I continue to return is because it is so easy for me to eat so well. I think the biggest caution is often with restaurants in World Showcase. Someone else may have more (and more accurate) info on this, but if I remember correctly, those restaurants are not run by Disney Dining and may not follow the same Disney protocols. That being said, I ate at Teppan Edo and Tutto Italia on different trips and had good experiences at both.

At the end of the day, when it comes to eating out for multiple meals, I feel safest at WDW than anywhere other than my own house.

Everything about this post! Disney is also where I feel the safest eating out with my multiple allergies and gluten sensitivity. Teppan Edo is a fave of ours and they go above and beyond for my allergies. Others that have been great are The Plaza at MK(TS), The GF Cafe (TS), and Lotus Blossom Cafe at EPCOT (QS).
 
My OH was recommended to go GF due to health issues, he's not coeliac but eating less wheat and barley helps him.
He claims that he eats better in the world that anywhere else on earth.
Just make sure you note the allergy on the ADR, mention it at check in and wait for the Disney chefs to work their magic on you :-)
 
I need to be gluten free and had a great trip two years ago. Disney protocols are excellent. I just wanted to echo the comment about non-Disney managed restaurants in Epcot. The one restaurant that left me feeling really sick was Marrakesh, and they were clearly not managing the meals well. Avoid at all costs.
