We went to Aulani in July and experienced some of the GF options. I found the CMs to have a good understanding of what menu items were available and how they were prepared (strict GF with markers placed in food, prepared separately, or "as a preference" meaning food was GF but may have been prepared near non-GF foods.) There was GF pasta, penne style to signify it was GF. GF chocolate cake, GF buns for sandwiches, GF flatbreads for the pizzas (although we did not try those). I was told fries were not GF since cooked in oil with non-GF products. There were also several main dishes that contained meat or seafood that were naturally GF. What I liked most was the the CMs never made me or my DD feel like we were being difficult "for our special requests" I know how hard it is traveling and advocating for your health and they were really respectful which I so appreciated.
Have you checked the online menus for Aulani? They are bit harder to find but are on the website somewhere under dining.
