Gluten Free Dessert and Food ideas?

A line of products that my kids really like is Enjoy Life. The cheapest place I've found to get these is amazon.com of all places. I set up the subscribe and save for several of the products which gives me an extra 15% off plus free shipping and they were already cheaper than anywhere in my area before the discount. Gotta save any place I can because the specialty products are not cheap. You do have to order by the case but I already know which products my kids like so I know they'll eat up the whole thing.

For any product that they carry at Whole Foods Market, I call ahead and order the item by the case. They give 10% discount on foods purchased by the case. I do this with frozen goods and items not available on amazon.com.

My 3 year old daughter and I were diagnosed with Celiac last year, so I know how hard it can be. For breakfast items Chex has a few GF cereals. We like the Honey Nut Chex and Chocolate Chex. It taste's like normal cereal, not like most other specialty cereals. We also use corn or rice chex to make muddy buddies for dessert (the recipe is on the box), it is VERY good and everyone who tries it likes it.

We also make GF peanut butter cookies. Super easy. It's just 1 cup peanut butter, 1 cup sugar, and one egg (I usually add chocolate chips too). Just mix up make into small balls (makes about 24 cookies) and squish them down a little with a fork. I cook them for about 10-12 minutes at 350. So easy, and they taste pretty good too.

Trader Joes has a pretty good boxed GF mac and cheese. We will have that for lunch sometimes. Progresso makes a few GF soups, the GF ones usually will say GF on the label in little tiny letter, or just read the ingredients. Hot dogs are mostly GF. We'll have leftovers sometimes too.

It's really not too hard once you get used to it. All my dinners are GF now, just because it's easier that way. I will sub rice for pasta in a lot of recipes because rice is so much cheaper than GF pasta.

Bisquick also makes a GF mix, and it makes decent biscuits. Also we really like the Betty Crocker brownie and chocolate cake mixes. I will usually put chocolate frosting on the brownies, just because GF baked goods seem to be dry. But my whole family likes the brownies. And another dessert is rice krispy treats. You will have to use a GF rice cereal to make this though, since regular rice krispies contain gluten. But you really can't taste a difference. I like to make it with Envirokids chocolate rice cereal, and that always goes over well.

For us lunch is always the hardest. I do sometimes make lettuce wraps instead of a sandwich. If you have a Jimmy Johns near you, they do this too (called an unwich) and it's really good. And it's easy to make at home. Yoplait has a lot of good gf yogurt (stay away from Dannon, all of their yogurt has gluten).

I'm sure there is more I can't think of right now. If you have any questions pm me. I know how hard it is to get used to, especially with a little one.
