Gluten Free Counter Service options?

Our Thanksgiving week trip will be our first Disney trip since our 11 yo DD was diagnosed with celiac disease early last year. I have heard wonderful things about gluten-free dining at Disney, and we are excited to take her on a vacation where she will have so many food choices available to her.

However, most of what I have read about special diets on Disney's website and other sites like this one focuses on table service restaurants. But we will probably only do about 3 TS meals while we are there (we already have ADRs and have indicated the gluten-free requirement on the reservations). Can anyone direct me to a list of counter service establishments in the parks that have gf options so that we can plan meals? Is there a list of CS menus for special diets out there somewhere that I am not finding? Mostly what I see listed online for gf options at CS are cookies, cakes, and "egg replacer." I understand that a few places have allergy-free chicken nuggets as well. Is that really all that will be available to for her to eat, or will I have to wait until we arrive and check at each CS place individually? I know that AK has a kiosk with food allergy information, but as our schedule now stands we will not be visiting AK until late in the week.
 
We mostly do TS, but have done some CS. My DD, also 11 and dx'd early last year was able to get Amy's mac and cheese, chicken tenders, and I know she got something at Yak and Yeti CS. I think most CS places have GF options. They will bring out a manager and you can look at the book for your options. I am pretty sure columbia harbour house has salmon. Pizza Planet has GF pizza. She should have plenty of options.
 
Every restaurant at Disney we have been to has had almost identical offerings on the menu for gf. GF buns are available for hamburgers, hot dogs and sandwiches. Pizza, Mac and cheese, and chicken tenders are good options. The QS in the Mexican pavilion was one of our favorites.

If your only consideration is gluten-free you are lucky in the sense that gluten free is so common right now that she will eat as well as any non-gluten free person. As another poster said nearly everything they do can be made or is available gluten free. When you go to order just let the cashier know. They will sometimes now have a pre-printed menu for you, I am not sure if you need to talk to the chef if the menu helps but if necessary that is always an option.
(where the difficulty often comes in is with unusual allergies/complications or allergies that contradict each other- such as all the gluten free items having tapioca or eggs, or people who are avoiding all salt or sugar)
 
Yes, gluten is the only thing she needs to avoid. That is good to know that the CS places may have more options than just the chicken nuggets. We are staying offsite in a place with a full kitchen, so we will not have to eat every single meal in the park. We also plan on packing some food every day. Thanks for the feedback!
