Gluten Free at Universal

I'm curious if anyone has experience with eating lute free at any of the Universal hotels, CityWalk, or the sit down or counter service places in the Universal parks. I posted on the Universal board and only a few people responded with mixed/limited info and reviews. I'm hoping more people on this board might have had good experiences!?! Thanks!
