Give me your best crock pot recipes

4 frozen or fresh chicken breasts
1 packet of taco seasoning mix
1 can rotel tomatoes
1 cup of water if using fresh chicken.

cook for 6 hrs.
shred and serve with soft tortillas and all the taco fixings.
this can be easily doubled etc
 
We have a vegetarian at our house, and we all (carnivores too) love this:

Vegetarian Crockpot Mediterranean Stew
1 eggplant -- chopped
2 zucchini -- chopped
1 red or green bell pepper, seeded/chopped
1 onion -- chopped
3 large tomatoes -- chopped
2 cans garbanzo beans -- (14 oz.) drained/rinsed
1 Tbs oregano
Freshly ground black pepper
Salt
1 can artichoke hearts packed in water -- (14 oz.) drained/quartered
1 package egg noodles -- cooked
Crushed red pepper flakes -- to taste/opt
Add all ingredients except for noodles to the crock pot and stir well. (Sometimes I also add a Tbs of tomato paste for a thicker stew.) Cook on low for 8 hours. Serve over the cooked noodles. 4 Servings.

Note: I used whole can of tomato paste and and extra zuke instead of eggplant. Best thing I’ve ever had out of a crockpot, no kidding.
 
My pulled pork...sounds crazy but so easy and rave reviews...

put in crockpot, cover with GINGER ALE and chopped onion....No I'm not kidding
Cook as long as you want no less than 8 hours on low.
Drain....break apart with fork mix back in crockpot with barbecue sauce. WE use sweet baby rays. We serve on potato rolls and any side will do..to keep it easy maybe stovetop.

This beef recipe is very versatile. You can make shredded tacos, beef burritos, and or shredded beef served with mexican rice and beans.

INGREDIENTS:
1 1/2 pound beef chuck roast
1 medium onion, sliced
1 cup water
1 package (1.25 ounce size) taco seasoning mix
1 bottle (16 ounce size) taco sauce
1 can (7-ounce size) chopped green chilies

Mix the water and taco seasoning mix, top the beef with all of the ingredients. Cook on low 6 -8 hours.

For Tacos-1 package taco shells
For Burritos-1 package of large flour tortillas

Toppings: shredded lettuce, chopped tomato, shredded Mild Cheddar Cheese or Monterey Jack cheese, chopped onion, sour cream, guacamole

Serve with rice, black beans, refried beans and tortilla chips.
 

When I make a batch of sauce and meatballs, I make extra so that we can have meatball subs later in the week for lunch or dinner. Just add provolone cheese, hoagie rolls and parmesan, stick under the broiler for a few minutes to brown the cheese.

I always bring aluminum foil with me!
 
Slow Cooked Pork Tenderloin

Ingredients:

1 (2 pound) pork tenderloin
1 (1 ounce) envelope dry onion soup mix
1 cup water
3/4 cup red wine + 1 one for the cook!
3 tablespoons minced garlic
3 tablespoons soy sauce
freshly ground black pepper to taste

Spread the garlic over the pork, add the other ingredients. Cook on low for 4 to 5 hours, you can double the meat depending on the size of your crock pot, just add a bit of extra wine, soy sauce and water. I love this with white rice or over thin spaghetti noodles. Top with chopped green onions and crispy asian noodles.

My son loves it!

I mean submerge the meat. It usually takes about a liter of ginger ale to do this, sometimes more depending on the size of the pork.
 
Cheesy Italian Chicken
-1 to 1.5 lbs boneless chicken (can be fresh or frozen)
-1 can cheddar cheese soup
-1 can diced tomatoes (plain or italian flavored)
-1 tsp Italian seasoning
****Mix all together and cook on LOW all day (or at least 4 hours). Serve over pasta or rice with a nice green salad.

Creamy Italian Chicken
--1 to 1.5 lbs boneless chicken (can be fresh or frozen)
--1 package/envelope dry Italian dressing
--1 x 8oz cream cheese (I use 1/3 less fat), softened
--1 can cream of chicken soup
--Mushrooms (can use canned but I prefer fresh)

1--Place chicken in crock pot.
2--Mix dry Italian dressing with 1/2 cup or so hot water and pour over chicken. Cook on LOW all day (or at least 4 hours).
3--One hour prior to serving, combine cream cheese, soup and mushrooms and pour over chicken. Allow to cook on LOW for another hour.
4--Serve over pasta with a nice green salad

Mac and cheese in the crockpot is great...and little ones will like it. I don't have the recipe in front of me but if you want it PM me...

Also a ham would be very easy too. I put some gingerale on it to make it less salty.

The crockpot is a great idea!! I wish that we could drive so I could take mine with me. I use it several times a week at home.
 
One of our favorites is boneless skinless chicken breasts with a jar of salsa. Cook on low all day. You can serve the meat over rice or use it as taco, burrito or enchilada filling.

I do that all the time! I also will add a can of corn and occasionally a can of black beans to it. Then I shred and serve usually as burritos and left overs go in quesadillas.

I've done pulled pork using the McCormick seasoning packets.
 
Here is one that we just enjoyed (we've been following Irene on the Weather Channel while this was cooking):

3lbs Pork Shoulder Roast
1 pkg McCormick BBQ Pulled Pork Seasoning (for slow cookers)
1/2 cup Catsup
1/2 cup firmly packed Brown Sugar
1/3 cup Apple Cider Vinegar

All ingredients into crock pot and cook 4 hours (high) to 8 hours (low).

Serve it with a little cole slaw on sandwich rolls.
 
Throw in some beef stew meat. Pour enough barbeque sauce on it to cover it. Cook all day. At the end of the day you have great beef barbeque for sandwiches. Just pull it apart with a fork or spoon.

Round steak and onion soup mix with a package of water (use the onion soup mix package. Nice round steak later in the day that you can eat with salad or whatever.

Chuck roast with baby carrots, peeled cut up potatoes. Add a package of beefy onion soup mix, add a package of water and cook all day. Great pot roast for dinner.

Another version of pulled pork with root beer bbq sauce:
1 pork loin. Brown on all sides before putting in slow cooker.
Sliced onion
2 garlic cloves minced
Can or 2 of root beer to cover meat.

For sauce:
1 can root beer
1 bottle chili sauce.
Bring to a boil and simmer until reduced by half. It's a bit watery, so I often reduce to 1/2 can of root beer.

Shred pork and serve with sauce on buns.
 
I have a couple of recipes for you.

#1: 2 lbs. boneless chicken and 1 jar salsa; serve with rice or over pasta

#2: boneless pork loin and 1 bottle bbq sauce; shred pork with fork when cooked through; serve on buns/rolls with coleslaw.

The crockpot is a great idea!! I wish that we could drive so I could take mine with me. I use it several times a week at home.

We drive, but I am considering buying another crock pot to keep in the OL. We were considering flying for our next trip, and I was seriously considering having a crock pot shipped to the resort! :rotfl:

You read my mind! I decided today that since I am going at the end of October for F&W, that I will buy a crockpot to put in my owner's locker. How funny that I am getting excited about cooking on vacation! LOL!
 
Just to let you know it can be done -- I have taken a crockpot as a carry-on. At MCO on the way home TSA joked with me, saying it was a 'Crock", and also he bet my family enjoyed the meals.
