Girls Trip, Which park when?

We have an upcoming trip in May and will only have 2 park days. We're planning Disney Springs on arrival day (Saturday) then Epcot on Sunday and MK on Monday. Tuesday will be just a rest day until we leave at 4pm. Should I switch EP and MK? I've been reading that EP on the weekend is bad and MK on Mondays is bad so idk what to do. We will be there 5/14-5/17 so sliding in between holiday weekends.

I’d switch to MK Sunday and EPCOT Monday if I were you. Avoid the EPCOT weekend crowds especially during Flower and Garden.

Ugh so a wrench was thrown in our plans. The CM appreciation event is on the Sunday we were planning on MK. Do I switch parks again? Add park-hopper? We only have 2 park days so wanted to go rope-drop to close. I really wanted to see the castle lit up at night. If we add hoppers, I guess keep MK that Sunday, hop to Epcot for fireworks. Then maybe go to AK on Monday and hop back to MK that night. Does that sound like a decent plan?
