Oh yum! The only hashbrown casserole I've ever had was from Cracker Barrel. I love that stuff.
Try making your own. Soooooooooo easy!!

Saw on your other post that you had a nice time with you daughter. I'm looking forward to when I can take them out for mother/daughter days. I've tried in the past but right now they're a little too young.



Oh well, can't believe the weekend is over already. I need it to start over...:guilty: I haven't decorated my house for Christmas at all. The kids and I made a gingerbread train today but we still need to put the tree up and decorate the house. I'm just don't have the 'spirit' yet.....:scared1: What's wrong with me??? This is my time of year.

Absolutely okay to ask. I shared with you all because I know I can talk to you all. My breasts are doing well :lmao: No cancer and no lumps since the one was removed. I am very adament about checking them over because of the lump that I did find.

I'm feeling okay just feels like the holidays are being rushed this year.

I'm on a roll. Next up:

Soft Ginger Cookies

2 1/4 cups flour
2 tsp. ground ginger
1 tsp, baking soda
3/4 tsp. ground cinnamon
1/2 tsp. ground cloves
1/4 tsp salt
3/4 cup butter, softened (No substitutions please.):snooty:
1 cup sugar
1 egg
1/4 cup molasses
2 Tbsp. sugar

Combine flour, ginger, soda, cinnamon, cloves and salt. Set aside.

In a large mixing bowl beat butter and gradually add the sugar. Beat until fluffy. Add the egg and molasses and beat well. Stir in dry ingredients. (If you have a Kitchen Aid Mixer just do it all in there.)

Shape into 1 - 1 1/2 inch balls. Roll each one in the 2 Tbsp. of sugar, and place on an ungreased baking sheet. About 2 1/2 inches apart. (They spread.)

Bake in a 350* oven for about 10 minutes, or until light brown and still puffed. They will get some cracks in them. Don't over cook. Let stand for 2 minutes and then transfer them to a wire cooling rack or counter top with wax paper on top. Makes about 24 - ? cookies, depending on the size you choose.

This year I'm going to try something I found in magazine for ginger cookies. A lemon glaze. Here goes.

Lemon Icing

1 cup powdered sugar
1 Tbsp. water
1 tsp. lemon juice

Combine and drizzle over cooled cookies.

Ewww, no thanks! I remember what my room was like as a teen. :scared1: :scared: I needed to push all my stuff to the sides to make a path from the door to my bed! :eek: Now I am a absolute neat freak!!!!!

Ewww, no thanks! I remember what my room was like as a teen. :scared1: :scared: I needed to push all my stuff to the sides to make a path from the door to my bed! :eek: Now I am a absolute neat freak!!!!!

We did have a nice time and it's so fun to have one on one time like that. In fact, I just finished painting her nails. Of course, it was a dark purple/black-ish color, but hey, that's ok. :rotfl:
They grow up so fast though, so you really have to cherish each age while you can. :goodvibes

I hope you get your Christmas "spirit" soon. :hug: What are your plans for the holiday? Taking any trips anywhere?

Me too! I have a recipe very similar to that one but it calls for chopped onions which my kids complain about so maybe using the onion salt will be better. My aunt used to make them and I could have eaten the whole pan!!

You two should have seen my closet when I was in elementary school! :scared1: There was as least three feet of junk piled up!!! One time I got in huge trouble and my punishment was to clean my closet. Believe me, ever since then the floor of my closet has been visible!

The recipe that Melody posted is exactly the one that I was thinking of. My brothers and I didn't like onions either as kids so my mom also used onion salt instead. Now, though I am all about the chopped onions in it.

There are a million different recipes for strata so feel free to experiment. My family loves ham and cheddar cheese, but we sometimes do gruyere and aspargus, or monterey jack, peppers and sausage. However the basics are as follows:

Prep Time: 25 minutes
Cook Time: 1 hours, 10 minutes
Ingredients:
10 bread slices, cubed
2 cups grated cheese (cheddar or gruyere are best)
2 Tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
2 Tbsp. butter, melted
8 eggs
3 cups milk

Optional:
1 pound of Sausage, ham, or bacon
Vegetables such as mushrooms, peppers & aspargus

Preparation:
Preheat oven 350 degrees. Grease 13x9" glass baking dish. Layer bread, cheese and other fillings in dish. Repeat layers, ending with cheese.
In large bowl, combine remaining ingredients and beat well to mix. Pour over layers in baking dish. Cover tightly and refrigerate overnight. In the morning, preheat oven to 350 degrees. Bake casserole for 60 to 70 minutes until puffed and light golden brown. Serves 8-10
