Ok Divas--I made the yummiest thing yesterday that was SOOOOO good that I just had to share. Years ago I ate at this restaurant in Newport Beach called Pascal and the potatoes accompanying the entree were to die for. I swore they had cheese or something in them--there were these little bits of yumminess between the potatoes.
Yesterday on a whim I went online and did a search for Pascal Potatoes and found a recipe!!! Yay!!!
This was SO easy and so good!
Butter for greasing baking dish
1 garlic clove, minced
4 large russet (baking) potatoes (2 1/2 lb total)
3/4 teaspoon salt
1/4 teaspoon black pepper
2 cups heavy cream
Put oven rack in upper third of oven and preheat oven to 375°F. Butter a 13- by 9-inch glass baking dish.
Scatter garlic in bottom of baking dish. Peel potatoes and cut into 1/8-inch-thick slices. Layer potatoes in dish, sprinkling each layer with some of salt and pepper, then pour cream over potatoes. Bake, gently tamping potatoes down occasionally, until tender and top is golden brown (cream will be slightly thickened), about 45 minutes.
Tips from Cheryl--4-5 pounds of potatoes was more than we could eat--I used red potatoes because I had them on hand and probably just a couple of pounds and an 8 x 8 dish. I also put garlic in the bottom AND on top (I like garlic). I have this huge jar of minced garlic from Costco so it's easy to use.
Next time I am going to put chopped chives in too.

The good news is, our garage had never looked better!!! LOL It needed to be cleaned and organized but odds are we never would have gotten around to it. This sort of forced us to get moving. And now it's organized top to bottom.![]()

Morning ladies! I left out the "good" part because I am not having a good morning thus far. We woke up to a broken water heater and a flooded garage.![]()
I swear if it's not one thing, it's another. First a broken van, then sick kids, then my Grandma in the hospital, now this. And I'm still feeling sick and worn down myself so this is all just a bit much for me right now.![]()
Anyway, don't mean to come here and be a downer! Sorry about that.

Oh my! Cheryl, you truly do spoil all your family and friends! And you'd even make me a beef burger??? Awwww.Then I went grocery shopping and just finished prepping stuff for a BBQ I'm having tomorrow--(salmon burgers--which I know Beth wouldn't like--if she were here I'd cook her a beef burger!) I also made a pasta salad, a cucumber/onion salad and we (Mom and I) made an ice cream cake. My friend is bringing the buns and corn on the cob.
Sounds like you are having a nice weekend.My mom and dad came over yesterday and helped us paint the bases to them. Which was so nice, we all painted, laughed and talked, we would take swim breaks and jump in the pool then get back out and paint some more. Bob and I painted from 7 in the morning til 8 last night. We are going to start painting now. Then at 11 drive to new mexico with my parents for maragaritas and cactus roasted brisket with desert honey chipolte bbq sauce..it is so yuM.
I'm sorry to hear that. Try and get as much rest as you can, and I hope you don't get any sicker.I feel better in the mornings but my nights stink. I have a hard time sleeping but otherwise I am just kind of achy which I will take over a full blown cold!
Awww, this trip will be so great for you all. He's going to love having all that mommy time!DS was NOT happy when I told him I was working a double today. Each time he seems to have a bit more difficult a time with it. Hopefully the trip will help remind him who I am!
I had to go back to work full time. We really want to move back East next year, so I'm working more to make more, but it adds so much stress because I still do all the schooling and therapies.

Well, I'm back from Disneyland, tired and broke - LOL.
Had a nice time but good grief was it HOT and HUMID! A few times I really thought I was going to pass out, and Justin had a few moments when he thought he was going to be sick. We drank water water water all day, but the heat at times was just too much.
Trip highlights:
*Extremely hot and humid! Sweat, sweat, and more sweat. Had to peel our clothes off at the end of the day. Gross.
*Low crowds until Friday evening. Lines were short, even for Space and Peter Pan. The only long line was for Splash, which was 45 minutes all week. No secret as to why that was - LOL.
*We saw the new dragon make it's debut performance in Fantasmic - very cool.
*My family had our first Dole Whips - yummy.
*Met with Cheryl and Jen at the Lost Bar - two AWESOME, accomplished ladies! They both inspire me so much to continue to pursue my Masters and future goals.
*Went to Universal Studios for the first time in 30 years - loved it!
*Universal provides cooling stations throughout their park - loved those!Why doesn't Disney provide those throughout their parks?!?!
*Really liked the new pirate kids suites at the HOJO. Didn't like the view or the traffic though, but still very nice. Having two bathrooms was great.
*Found Donna's Mickey-vampire shirt - too cute! I'll mail it out to her tomorrow.
Now, the one bad thing......the day we were leaving (right before we left for the airport) I bought a cute Minnie hoodie t-shirt at the World of Disney store, along with some other stuff. I take the Disneyland bag with the stuff we just bought and put it in our suitcase. We get home, and yesterday evening I was going through everything. I pull out the Minnie hoodie t-shirt and discover the check-out CM at the register didn't take off the security tag.....and this security tag contains ink too. Not sure what I'm going to do, but I'm a little peeved about it! Hopefully I can find a store here that can take it off for me. Otherwise, I'll have to go through the trouble to contact somebody at Disney, fight with them, ship the shirt back, eat the shipping costs, blah blah blah. Stuff like that just really annoys me, you know, because I have to go through all the trouble to correct someone's else's mistake.![]()
Did you guys hear that Rivers of America will be drained during our trip?! I heard that they are draining it in January and it won't be refilled till April! Bummed! No Fantasmic.

Yes, they announced that months ago. That is the main reason why I was originally not sure if I would go on this trip but would rather take a trip with my family this summer or fall. I was trying for September but it was not working out then DH decided to attend a conference in December so that timing worked out great because I can get my "boys" right after they finish college finals and hop on a plane to meet DH in Anaheim. Then recently I decided that I would go ahead and do the Divas trip also (birthday present to myself!) but I will already have seen the Rivers in December. I don't care so much about Fantasmic but I love walking and sitting by the river. I was there once when they were building Fantasmic and it was just not the same having the whole river area fenced off.Did you guys hear that Rivers of America will be drained during our trip?!
