Gingerbread recipe

Does anyone have the recipe...the Food tv special really got me in the mood. And I would love to try WDW's recipe(they said in the show they give it out with the Gingerbread Houses). TIA :sunny:
 
LOL, I have it somewhere..but, just to let you know. They start making that gingerbread 6-12 months in advance.
 
We were at the GF Friday and watched them decorate a small Gingerbread house. When it was over, they passed out the recipe.

Honey Dough:

4 lbs honey, 3 lbs bread flour

Method:

Bring honey to a boil and mix into bread flour. Mix until dough has a smooth texture. Allow to cool. Wrap in plastic and allow to rest for up to two months.

Spice Dough:

2 lbs all purpose flour
4 eggs
2 cups light corn syrup
1.5 oz ammonia*
1 cup water
1 oz ground cinnamon
1 oz ground nutmeg
1 oz ground cloves
1 oz ground ginger

Method:

Mix all purpose flour, eggs, light corn syrup, and spices together. Dissolve ammonia* in water and add to mixture. Combine the honey dough and the spice dough. (*powdered ammonia or ammonium carbonate is found in drugstores and must be ground to powder before using)

Preparation:

Roll the dough into 1/8" thick sheets and cut desired pieces. Brush with milk and bake at 340F for 12 minutes.

Yields one gingerbread house (13"x15"x10") or 10 - 15 ornaments

I also have the recipe for the icing that hardens like cement!!
 
Beattyfamily thank you...I guess I can't try the Honey one this year....If you could would you post or pm the icing glue. I don't eat them...ok maybe the candy...but I love making Gingerbread houses. :cloud9:

Sure!

Royal Icing:

4 cups powdered sugar
1 Tbsp cream of tartar
4 egg whites
1 Tbsp lemon juice

Method:

Make icing just before the assembly of the gingerbread house. Beat egg whites until light and frothy. Add the icing sugar and beat until incorporated. Add the cream of tartar and lemon juice while continuing beat until smooth and icing is stiff. Cover the surface with plastic wrap to avoid it drying out. Assemble your gingerbread house according to your pattern using the royal icing as the glue. For soft icing add 2 more egg whites and add food coloring.
 
Can you eat this gingerbread or is it only for making houses and ornaments?

Yes, you can eat it. They were selling shingles (with chocolate on one side) and when they were doing the decorating demonstration, they offered samples to taste.
 
Does anyone know if you can make it and let the dough rest for like only 2-3 weeks?

I guess everyone watched the episode.

I know you said you can eat it but I thought that if you had anything with a raw egg in it that you could get some kind of illness?
Don't mean to put you on the spot I just don't want to chance making anyone ill.

Yes, I answered her question about the Gingerbread dough/pieces, which are baked so yes, it's edible.

The royal icing has egg whites in it. It's up to each individual on whether they think it's edible or not. Many people eat raw cookie dough and live to tell. I didn't recommend eating the royal icing one way or another, I simply posted the recipe.

I like making the houses for Christmas...I don't eat the houses..but sometimes you can make it that you can take candies off if you want. I do it by using wrapped candies like kisses or the red and whites. BTW Mayo has raw egg in it too... when you beat and process the egg whites you are adding air and changing the consistancy of the egg. But you can not make a ginger bread house with out royal icing or other type of glue.

I would only make the spice dough now...to make the honey dough we would have to start much earlier. :)

I don't know. But since the recipe says to let it rest for up to 2 months, I would think you could. If you try it, let us know how it turns out.

Thanks! I may make this sometime as cookies. Do you know what type of chocolate they used (milk, semi sweet, etc)? I watched the foodtv show, but don't remember if they said what type. I know they said the chocolate helped the pieces stick.
Did you taste any of the gingerbread? If so, how was it?
We were there last year during the holiday's but I don't think we had any gingerbread.

Actually, if you watched the episode the egg whites come from a carton. I was a pastry chef in a previous life and we always used pasturized egg products, i.e. egg whites, yolks. We used whole eggs too when items were to be baked. But mostly they were pasturized. And if you really want to know the raw egg yolks are more of a hazard than egg whites.
 
Commerical mayonaise does NOT have raw eggs in it.
 
I read somewhere that you can substitute Meringue Powder for the egg whites.
 
I agree with dbarker--I use meringue powder (egg white substitute) every year for my royal icing and it works very well. The package will give you the amount to use to equal the number of egg whites in the recipe. I think the brand is Debi or something like that.
