We are headed out in 31 days, and trying to figure out when and where we can see the gingerbread houses.

Our plan is as such:

4th - Arrive and Relax at Resort. Possibly visit Disney Springs.
  • Was thinking of taking a bus to the Magic Kingdom, and taking the Monorail Resort Loop to check out some gingerbread houses. The thought after that was to catch a resort bus to the boardwalk to beach club, gingerbread house there, and then walk to the Skyliner to catch back to the Rivera.
5th - AK in Morning, park hop to HS.
  • If unable to score a lunch for Sci Fi on the 7th, hoping to get a dinner for this evening.
6th - EPCOT, afternoon break/swim, EPCOT in Evening and take advantage of Extra Hours
  • Trying to score a Space 220 Lunch or Dinner
7th - HS
  • May purchase Genie+ depending on crowds
  • Will purchase LL for Rise
  • Oga's for evening drink, and for experience
  • Building Droids after Oga's
  • Trying to score a Sci Fi lunch. No success yet. :(
8th - MK , afternoon break/swim, MK in Evening and take advantage of Extra Hours
  • May purchase Genie+ depending on crowds
  • Depending on crowds may purchase LL for SDMT
  • Dinner at Skipper Canteen
9th - Checkout day, Beaches and Cream for Lunch

Besides the 4th, any other time you might see branching off to see these houses?

In the MK area they have the amazing gingerbread house at GF. At WL they have a huge tree in the lobby and Contemporary has a holiday display but I do not recall there being much at the Poly. If you are up to it in the Epcot area the BC has the chocolate carousel and I believe YC has a train garden.
I think BW has a smaller gingerbread house than GF you could buy from as well. If not you could see those on your checkout day when you go to B&C for lunch. On your AK day you could swing by AKL to see their tree and visit the animal areas. On your arrival day when you visit DS not sure if they are having the Christmas Tree Trail or spread out like I heard they did last year.

In Order of wow factor:
Grand Floridan - Lobby - Full Size Gingerbread House
Beach Club - Lobby - Gingerbread Horse Carousel
Epcot - World Showcase - America - DC/Capital Building made of Gingerbread
