Can you use a Disney gift card to pay for things (meals, etc) at Aulani? And if you have a party of 6 or more is there the automatic gratuity at restaurants like the park restaurants?

Yes, you can use gift cards in all kinds of places at Aulani--restaurants, room balance, shops, spa, cabana rentals, etc. Pretty much everywhere. Not sure about gratuity, but I'd assume the answer is yes.

Yes and yes, though it's 18% gratuity for a party size of 7 or more, per the menu photos I have.

We always bring gift cards. I love having it all paid for and no big bill at the end!
