I don't think the children's menu changes much between QS and Table Service in most of the restaurants, check a few that you are considering to confirm that. But yes, if I were doing the dining plan I'd be going to less casual places/character meals. To compare, check the childrens' menus at Sci-Fi, Via Napoli, Plaza Restaurant, Yak&Yeti, etc.
Oh, has this changed in recent years? We are staying at the Wilderness Lodge and were hoping to have a table service meal in the parks one day and then use our quick service meal that night while enjoying the pool. I had built that into the itinerary after reading an article online saying Geyser Point was unique because you can use table credit (if you sit down) or quick service (if you order at the counter and bring food over to the pool).
