My mom used to make a version of this with graham crackers and a harder chocolate topping. These are much milder in taste.

Buckeye Bars
1/2 cup (1 stick) butter, softened
3/4 cup crunchy peanut butter
22 NILLA Wafers, crushed
2 cups powdered sugar
1/2 of 8-oz. tub COOL WHIP Whipped Topping (Do not thaw.)
3 squares BAKER'S Semi-Sweet Chocolate
Make It
LINE 8-inch square pan with foil, with ends of foil extending over sides. Beat butter and peanut butter with mixer until blended. Mix in wafer crumbs. Gradually add sugar, mixing well after each addition. Press onto bottom of pan.

MICROWAVE COOL WHIP and chocolate in microwaveable bowl on HIGH 1 min.; stir. Microwave 15 to 30 sec. or until chocolate is melted; stir until blended. Spread over peanut butter layer.

REFRIGERATE 2 hours. Use foil handles to lift dessert from pan before cutting to serve.
 
Those sound yummy AWM! I'll have to try those, DH and DS love anything with peanut butter!

Here's one of our holiday favorites. Everyone always loves these (even those who don't normally like pumpkin pie).

Pumpkin Pie Bars

Crust:
1 box yellow cake mix
1/2 stick butter
1 egg

Grease bottom of a 13x9 pan. Reserve 1 C cake mix for topping. Combine remaining cake mix, butter and egg. Press into pan.

Filling:
3 C pumpkin pie filling mix (or use 1 1lb can pumpkin, 2 1/2 tsp pumpkin pie spie & 1/2 C brown sugar)
2 eggs
2/3 C evaporated milk

Prepare filling by combining all ingredients until smooth. Pour over crust.

Topping:
1 C reserved cake mix
1/4 C sugar
1/3 C butter
1 tsp cinnamon
nuts, optional

Combine all ingredients & sprinkle over filling layer. Bake at 350 degrees for 40-45 minutes or until knife inserted near center comes out clean.

After cooling, store in the refrigerator.
 
Here is something my mom used to make every year. It is so bad for you, but super yummy!

Beer Cheese Dip

8oz Cream Cheese
8oz Wispride Cheddar Cheese
approximately 8oz beer. (I like to use something with flavor like a Sam Adams)
(also eye the amount of beer, you just need enough to make cheeses smooth and dip-like)

Mix with electric beater until smooth. Chill and serve in Pumpernickle bread bowl. Cut up another pumpernickle loaf for dipping.

Even if you don't like beer, you will like this dip.

Enjoy.
 

Would it work with non-alcoholic beer? I'm sure my boys won't leave it alone and I'd rather not be peeling them off the floor. ;)

Honestly, the beer isn't enough to have any effect. It is a flavor thing. I am sure it would work with non-alcoholic though. Wispride is the spreadable cheddar cheese. Kind of like a pub cheese. You can find it in the dairy section by the Kraft slices.
 
Christmas Bread
4 cups all purpose flour
1 package active dry yeast
1 cup milk
½ cup shortening
¼ cup granulated sugar
2 eggs
2 cups powdered sugar
1 teas vanilla
milk

1. In large bowl combine 1 ½ cups of the flour and yeast.
2. In saucepan heat 1 cup milk, shortening, granulated sugar until warm (115 to 120 degrees), stirring constantly.
3. Add to flour-sugar mix in bowl. Add eggs.
4. Beat at low speed of electric mixer for ½ minute. Beat 3 minutes at high speed. By hand, stir in enough of remaining flour to make a moderately stiff dough.
5. Place in greased bowl, turn to grease surface.
6. Cover, let rise till doubled (about an hour).
7. Punch down; cover and let rest 10 minutes.
8. On flour surface roll into 15 by 10 inch rectangle. Cut dough into fifteen 1-inch wide strips.

Shape dough
1. Tree
Lay a 10 iinch strip on greased baking sheet (in the middle of sheet). This is the trunk. Lay strips across trunk to form branches. Cut them 9, 8, 7, 6, 5, 4, and 3 inches long.

2. Wreath.
Take three 15 inch strips and braid them. Form braid into a wreath. Take a short piece of dough (about 3 inches) and roll into a snake. Form it into a bow shape and place on wreath.

We make lots and bring them to niegbors on Christmas Eve or the day before. It is one of our breakfast treats on Christmas Day. One of my brother loves it so much my mom always makes him his own piece to eat.

Easy Oreo Truffles

1 package (1lb 2 oz) Oreo’s
1 package (8 oz) Cream Cheese, softened
2 packages (8 oz) Bakers Semi-sweet chocolate, melted

Crush 9 of the cookies to fine crumbles in food processor, reserve for later use. (Cookies can also be crushed in a reseal able plastic bag using a rolling pin) Crush remaining cookies to fine crumbs. Place in medium bowl. Add cream cheese, mix until well blended. Roll cookie mixture into 42 balls about 1-inch in diameter.

Dip balls in chocolate, place on wax paper-covered baking sheet. To easily dip truffles, place truffle ball in melted chocolate to coat, roll if necessary. Lift out with two forks, this will allow excess chocolate to run off, before placing on wax paper. Any leftover chocolate can be stored at room temperature for another use). Sprinkle with reserved cookie crumbs.
Refrigerate until firm, about 1 hour. Store leftover truffles, covered in refrigerator.

You can also substitute Nutter Butters or Vanilla Wafers. All very yummy!

Me and the kitchen don't get along so well, although I'm trying to learn more. Although I'm also trying to overall eat healthier, so maybe it's a good thing that all those yummy baked goodies seem like way too much effort for me. I won't be doing it this year, but in years past my go-to Christmas recipe was the cake-mix cookies - they always got rave reviews.

Much like NEE, I have no Christmas recipes. I avoid cooking at all costs. One of my most treasured recipes is for slice and bake cookies. My Dad is coming up from Florida for Christmas and will be coming over at lunchtime on Christmas Eve to do presents, etc. I told him to be prepared for takeout pizza!
 
I'm not foreign in the kitchen, but it isn't my expertise either. My brother and DH always cook an amazing Christmas day feast - this year is prime rib. My mom makes the most amazing Cinnamon bread, we all look forward to it, more than the presents!
 
Here's mine:

Cream Cheese Thumbprint Cookie
Makes about 5-6 dozen

Cookie
Mix:
2 c butter
1 c powdered sugar
1 tap vanilla
1 tap salt

Add:
4 c flour, sift

Shape into balls. Place on ungreased cookie sheet. Place a thumbprint in each.

Bake 10-12 minutes at 350 degrees. Cool. Remove from pan.

Filling:
Mix:
8 oz cream cheese
2 ½ c powdered sugar
5 T flour
½ c coconut

Place in indent.

Melt bakers chocolate squares and drizzle over top.

1/2 cup Hugs
4 teaspoons Kisses
4 cups Love
1 cup Special Holiday Cheer
3 teaspoons Christmas Spirits
2 cups Goodwill Toward Man
1 Sprig of Mistletoe

1 medium-size bag of Christmas Snowflakes
(the regular kind won't do !)

Directions:
Mix hugs, kisses, smiles and love until consistent.

Blend in holiday cheer, peace on earth,
Christmas spirits and good will toward men.

Use the mixture to fill a large, warm heart,
where it can be stored for a lifetime (it never goes bad !).

Serve as desired under mistletoe, sprinkled liberally
with special Christmas Snowflakes.

It is especially good when accompanied
by Christmas Songs and family/friends get-togethers.

Serve to one and all.
